Red Pepper Thief

Hi friends! 

We’ve had some yummy meals this week – one of the highlights was this Spanish-esque shrimp and rice dish. 

It was a Sun Basket meal (we are still alternating between Blue Apron and Sun Basket (<- fyi those are both affiliate links for deals on your first boxes if you interested) each week, depending which looks most delish), but it would be easy to recreate – just saute some onion and red pepper in a pan with a little oil and garlic, then add the rice and some water and let it simmer until the rice is tender (about 15 minutes).

Cook the shrimp separately in a pan with oil, then combine with the rice and add some fresh parsley! I added some turmeric to the mix as well for a little extra flavor. 

My sous chef “helped” by eating lots of raw red pepper, and then when she got bored of that and wanted to be held, I had her help me measure some of the ingredients. She is happiest when she has a task/mission. 😉

We also had some yummy stuffed peppers this week – see my mix + match stuffed pepper recipes post for ideas!

These were turkey, black bean, and onion cooked in Mexican seasoning and topped with feta and cilantro. We left the peppers raw because we were tight on time.

With the cooler weather I’m craving something cozy – might need to pick up ingredients for my old fave Creamy Mexican Chicken Chili Soup this weekend… LOVE that recipe. Have you guys gotten on the chili/soup train yet this fall? 

Riese and I also took down a number of breakfast egg burritos this week – I threw a little of the leftover pepper filling in this one, too. 

We had one day of pouring rain, but mostly it was a nice fall week! It sure makes my daily dog stroller walks more pleasant.

Most of the leaves are still green-ish, but we came across this gorgeous tree on yesterday’s walk – it looked especially pretty with the bright blue sky!

My friend Sokphal and I had great weather for our Monday morning run date this week, too.

Starting out with gloves but still in a short sleeved shirt = my fave running weather. I think it was about 50 degrees and it was perfect. 

Slowly getting that pace back down! 

Other fitness from the week included yoga (x2) and another pilates boot camp. Really enjoying that class (minus the 6 a.m. start time) – so hard but fun! 

I have another run date on the calendar for tomorrow morning with my friend Karen and I’m pumped – weather looks awesome.

    I’m glad they weren’t hot peppers, hah! And I loved seeing Riese with a firm hand on the leash for your walk. She obviously thinks she’s in charge.

    Anne, tonight I made the creamy chicken chili that you mentioned and linked to, and it was EXCELLENT...even my three kids ate it!!!! I thought the chilis might make it spicy, but it was perfectly mild...but so darn flavorful!!! Thank you! This will be in heavy rotation this fall in my house.
