Smoked Salmon 5-Minute Packable Lunch

Hello friends!

In honor of it being finals week, I have another 5 minute packable lunch to share with you guys! Because time is currently of the essence — as I’m sure it is for you this busy holiday season as well! 🙂

Today’s star was a package of smoked salmon I picked up at Trader Joe’s a few days ago 🙂

I decided to make a variation of my Smoked Salmon & Dill Wrap, using hummus instead of laughing cow cheese and a mini-sized whole wheat pita instead of a wrap!

I simply spread on some hummus, shook on some dried dill, topped with a serving of the smoked salmon, and finished it off with some fresh baby spinach!

Next up — salad for some more veggies and bulk!

I made a quick salad with spring mix greens, tomatoes, feta, and some cracked pepper. Topped with a little baggie of balsamic vinaigrette for later!

(Don’t forget to pack a fork! 🙂 I’ve totally done that before. Or ONLY packed a fork and had to use it to eat yogurt. Fail!)

Since I’m also trying to use up the fridge before I leave for DC on Saturday, I grabbed a random carrot to munch on, too:

And, since I’ll be at school allllllll day long, an afternoon snack was packed, too! First — another mini-sized whole wheat pita with some almond butter and banana slices:

One last thing — something to drink! I’ve been bad about spending too much money on hot tea lately at school (black tea with skim milk is my favorite mid-morning snack — soul warming AND filling from the milk!) so I packed my own mug and tea bag — I can get hot water and milk at the cafe for free! Sweet.

Off I go — today is the official last day of classes! Our Food Science final exam went well yesterday, and today I have my Maternal & Children’s Nutrition final. After today, just one more left — Biostats on Thursday! Eep. That will be the hardest out of all of them, I think.

    I pack a lunch for work most days, too. On a super lazy night (I pack the night before) it's PB&J. My favorite, though, is a big salad or veggie sandwich.

    I love smoked salmon. One of the food places on campus has lox, so I always get a whole wheat bagel with lox + cream cheese (veggie cream cheese!). It's so good!

    I love packing my own tea bag and reusable mug when I'm out for along time. It is amazing how much a cup of tea costs - plus using a reusable mug is good for the environment!

    Packing lunches quickly is key for me - I'm usually rushing in the morning to get to work. I love when I have leftovers, but wraps, soup, fruits, veggies and yogurts are often my go-to! Good luck on your final!!

    The salad and the fruit look really good. Can you believe, I have never eaten salmon. It looks so orange, I'm afraid to try it. Don't like fish too much. Good luck on all of your exams. PS I know you were in Tampa last year and today it was in the mid 20's. It was 24 in Atlanta at 5 am. The cold is bone chilling in the South.

      I know the weather is so crazy right now! Sadly my parents don't live in Florida anymore so no warm Christmas for me this year - although it doesn't sound like it's all that great there now anyway!

    I love smoked salmon! I like to have it with on a bagel with cream cheese, onions, and tomato! <--- My go-to breakfast at a bagel place.

    jsut found you site via a recipe link for the Hummus Guacamole. Love, love, love you 5 minute lunches. I met with a dietician yesterday and working on eating better for insulin resistence. You site is a new fav!! I am love forward to trying your Hummus Guacamole. I really need to work on my lunches...and taking care of me! :-) Great site.
