I have a new breakfast love.
Oh, yes. That would be spiced cranberry compote, cottage cheese, and oatmeal, all layered together. So epic.
Spiced Cranberry Compote Oatmeal
|Cranberry Compote (topping):
Combine oatmeal ingredients in a bowl, microwave on high for 3 minutes, stirring once. Set aside.
In a small pan or skillet, mix all cranberry compote ingredients. Turn heat to medium and stir frequently, until desired consistency reached (a few minutes).
In your original oatmeal bowl, layer cottage cheese over the cooked oatmeal, followed by the cranberry compote topping. Add a sprinkle of brown sugar, if desired. Enjoy!

Introducing: The “Me Movement”!
The “Me Movement,” created by Rebecca Scritchfield, an RD I met while at the Healthy Living Summit in August, is a movement aimed at reminding you, particularly during this busy holiday season, to take care of the most important person in your life — you! Sometimes it seems easier to let ourselves go, to stop exercising and eating healthy because we’re too busy, and put all of the parties, meals, work, presents, and family events before our own well-being without even realizing it. This holiday season, Rebecca is encouraging you to remember to take care of yourself, too. Whether that means sleeping in a little, making time to go to a yoga class or for a run, or simply relaxing with friends, we encourage you to do something nice for yourself this season! Click here to join the “Me Movement” and with it, a network of people on their own journeys to personal well-being.
Rebecca recruited me to make t-shirts for the movement and I was happy to help! Here they are:
Cute, huh? They’re available for purchase in my fANNEtastic t-shirt shop, and Rebecca is also hosting a fun giveaway contest for the shirts right now on her blog — be sure to check it out!
How have you put yourself first lately? I’ve been making time for workouts even though it’s finals week. No matter how busy I am, I know I’ll feel happier and less stressed if I fit in a workout — even if it’s just some time on the elliptical with my flashcards!
Tomorrow is my last final exam — biostats!! I’m heading off to meet the girls at a coffee shop to study allllll day long, but we’ve decided that once we’re finished (late this afternoon) we’re going to reward ourselves with a trail run since the coffee shop is right near one of our favorite trails! Yay 🙂
Have a good one!
