Spiced Cranberry Compote Oatmeal

I have a new breakfast love.


Oh, yes. That would be spiced cranberry compote, cottage cheese, and oatmeal, all layered together. So epic.



Spiced Cranberry Compote Oatmeal

Oatmeal (base):

  • 1/2 C raw oats
  • 1/3 C skim milk (or soy)
  • Few shakes cinnamon

Second layer:

  • 1/3 C lowfat cottage cheese

Cranberry Compote (topping):

  • 1/2 C fresh cranberries
  • 1 Tbsp. lemon juice
  • 1 tsp. maple syrup
  • 1 tsp. vanilla extract
  • Few shakes cinnamon
  • Few shakes nutmeg

Combine oatmeal ingredients in a bowl, microwave on high for 3 minutes, stirring once. Set aside.

In a small pan or skillet, mix all cranberry compote ingredients. Turn heat to medium and stir frequently, until desired consistency reached (a few minutes).

In your original oatmeal bowl, layer cottage cheese over the cooked oatmeal, followed by the cranberry compote topping. Add a sprinkle of brown sugar, if desired. Enjoy!



I LOVED this. The salty cottage cheese, chewy oatmeal, and tart but sweet cranberries made an awesome combo. Give it a try yourself! :)

How have you put yourself first lately? I’ve been making time for workouts even though it’s finals week. No matter how busy I am, I know I’ll feel happier and less stressed if I fit in a workout — even if it’s just some time on the elliptical with my flashcards!

Tomorrow is my last final exam — biostats!! I’m heading off to meet the girls at a coffee shop to study allllll day long, but we’ve decided that once we’re finished (late this afternoon) we’re going to reward ourselves with a trail run since the coffee shop is right near one of our favorite trails! Yay :)

    Oh Anne, that breakfast dish looks delicious. I will try it. I have that shirt. I ordered it in light blue and white writing and it looks awesome. I had too many navy blue clothes, so I thought I would be a little different. Happy studying.

    Good luck on your last exam! I’ve been trying to fit in more yoga in the past few weeks. It definitely helps me relax and focus when I feel busy and stressed from school, exams, and other things to do.

    I want to try that oatmeal! I have some cranberries I need to use up.
    I’m totally with you on the workouts – when I was an undergrad I never skipped the gym during finals – it was what helped me study better! I used to bring my notebooks and flashcards on the machines me too :)

    Love that ME Movement — even during the Holidays I make time to run and go to Yoga because I know it will make me feel better when I indulge a bit!

    What a great movement! Those oats look great. I usually add Greek yogurt to my oats to make them more creamy but I love cottage cheese so I’m sure that would be fantastic too.

    Good luck on your last exam!! I hated stats. I can take all the calculus in the world (3 semesters, blech) but give me one stats class: I die. I’m sure YOU however, will do great! :)

    Ooooooooooo I will be trying this ASAP! :) I love cranberries! :)

    The way I put myself first is to workout. Even though I was busy with finals this week, working out helped clear my mind and keep me calm (for the most part!)
