So Many Roses

Another week of our new normal begins…

Let’s start things off with a picture of the rose bush in our backyard – it is exploding and so beautiful! I dropped off a bouquet of the roses for my mom yesterday for mother’s day. 🙂

Matt and Riese brought me breakfast in bed yesterday for mother’s day – it was very sweet!

And hilarious because Riese kept saying: “Happy Earth Day mommy!” She was a little confused by the whole thing. 😉

We spent the rest of the morning out on the trails! We walked to a small neighborhood trail near us. Riese insisted on wearing her “Super Riesey” outfit – a wonder woman cape and her helmet. 😉

For lunch we had more brunch-y food – a broccoli and parmesan quiche with some lemon-y greens (from Stomping Ground in Del Ray), plus some unpictured canned pineapple because we are all out of fresh fruit!

I ordered an Aldi delivery via instacart yesterday afternoon – excited to have some fresh produce around again for the week.

We ate a lot of pizza this weekend – we decided to order some on Friday night (plus BBQ chicken wings for me and spicy chicken wings for Matt, and some salad to share) and then had the leftovers for dinner on Saturday night.

On Friday, I mostly ate the wings and salad and just a little pizza, but Saturday I went 100% pizza.

For dinner last night, we made a Blue Apron meal – a yummy chicken with barley (love how chewy it is!), arugula, fennel, and pear with a vinaigrette. It was simple and tasty! I love a good grain salad bowl.

We also had a yummy roasted curry salmon with sweet potatoes and snap peas for lunch one day this weekend – another Blue Apron meal from last week that we hadn’t gotten around to making yet.

Really good flavor – all three of us loved the salmon!

One other meal from the weekend worth mentioning involved these Dr. Praeger’s quinoa and black bean veggie burgers! I forgot to get a photo of the meal, so here is the box instead, partly for myself to remember I liked these next time I see them at the store!

Delicious – definitely recommend them. The flavor reminded me a bit of my super old (but awesome) recipe for Black Bean Pumpkin Veggie Burgers (<– the recipe calls for only pantry staples if you leave out the parsley and use canned pumpkin). 

Besides some nice family walks, we also got in another fun live virtual workout class with Matt’s brother Drew this weekend – Riese joined us for the warm up and then enjoyed watching some Mr. Rogers.

Speaking of: Matt and I finally watched the Mr. Rogers movie (the one with Tom Hanks) on Friday night and loved it – so good!

    Love the intuitive eating while home post idea! How about a post for handling meals/snacks for school age kids during this time? My 8 and 9 year old meals are usually pretty regulated because of school/sports schedule. Now they are always home and although active, it is really hard to get as much exercise without practices, friends to play tag and such, and playgrounds. This makes me worry more about their eating habits too.

      That's tough having such a big schedule change! Remember that kids are great intuitive eaters and will adjust their food intake based on their hunger levels, which is based on their activity levels. So I wouldn't worry at all about them eating too much. What I would focus on is making sure they are eating before they get too hungry (a loose snack/meal schedule can help with this, based on when they used to eat perhaps?), and that they are having protein, fat, and carbs with meals + snacks versus something too light with not enough staying power (like carbs by themselves). There will be more general tips in my post on Wednesday that can be applicable to kids, too, so I hope it helps as well. Clearly I have a toddler so not an expert on the 8/9 year old situation, but hopefully this helps a little at least. :)

    I really enjoy having Dr. Praegers in my freezer. Those quinoa and black bean burgers, the fish sticks, spinach and broccoli cakes, and the California burger are some of my favorites. I never need a bun for the burgers as I like the crispy texture on the outside and go really well with so many different sides. It also really makes for such a great meal when I have no inspiration or need a break from cooking.

    I, for one, am glad that Super Riesey is on the job protecting the trails! ? And that rose bush is amazing! It’s nice that you “inherited” it!

    I haven't tried Dr. Praeger’s quinoa and black bean veggie burgers, but really like the Korean burgers. Especially good with some avocado (well, what isn't?).
