The Most Delicious Salad & An Evening Run!

Morning!

On Monday night, Matt and I enjoyed a simple but satisfying dinner following our evening workout.

Matt picked up a rotisserie chicken for us at the store, so we made some couscous and roasted asparagus to have on the side. Matt also made us some epic salads!

So good — mixed greens, peppers, cherry tomatoes, sprouts, feta cheese, and some hemp seeds! It was delish.

I loved the strawberry on the end for presentation. 🙂 It was dressed with a homemade balsamic vinaigrette — I’m loving making my own lately! It’s so easy — no measurements required, because I hate dirtying measuring spoons. It’s more fun to eyeball it! Just mix roughly two parts olive oil with one part balsamic vinegar, one part lemon juice, and one part dijon mustard in a bowl — whisk, add a little salt/pepper to taste, and enjoy!

Yesterday when I got home from class I decided to basically combine all the ingredients of Monday’s dinner into one huge salad for lunch.

In the salad was mixed greens, couscous, chopped asparagus, chicken, avocado, peppers, tomatoes, feta, and more homemade vinaigrette. SO good. I’ll be having this again for lunch today since we still have some leftovers! I love putting grains on salads — the couscous added a fun texture to it all.

I enjoyed my massive salad with a side of strawberries for a refreshing dessert.

And I caught up on my celebrity gossip while I ate. 🙂

I got a ton of work done yesterday afternoon and then met up with blogger friend Callie for an evening run around 6 p.m.! All these gorgeous light evenings have gotten me into evening workouts lately — weird since I’m usually such a morning exerciser!

Callie and I first met back in… October (?! I didn’t realize it had been that long!) when we ran 8 miles together — one of my first training runs for the Vegas Half Marathon in December. She is SUCH a sweetheart and we had a great time chatting away. We’ve been trying to meet up again for another run, but our schedules weren’t matching up very well. Well — last night we finally got our acts together. 🙂 It was great to see her again!

We had an awesome run — casual, fun, and very chatty. The weather was absolutely perfect, and it felt like such a treat to be out on such a gorgeous evening. I love combining social outings with workouts!

The miles flew by — we met up in Carrboro and ended up covering 4.41 miles (nice and flat ones, since we stayed in Carrboro) in 41:14. Yay!

Wonderful way to spend an evening. Callie — we must do that again before I move! 🙁

Time to buckle down — I knocked out two assignments yesterday and have many more to make my way through today. Hope you all have a happy Wednesday!

    I love morning workouts, but about 8 am which is when I start work so they don't happen unless I am off or its the weekend. So I workout after work from 5:45-7pm about which I have gotten used to and it is not too bad now!

      I'm the exact same way--morning workouts energize me like nothing else, but I don't usually end up fitting mine in until after work, when I'd much rather not do anything! It's helped me to just do about 15 minutes or so both before and after work, just to keep my energy levels up :)

    I try SO hard to workout in the morning...but it doesn't always happen. I think once the weather gets hot though, I'll be forced to do my runs in the morning when it's bearable!

    Anne - I noticed you've been wearing compression calf sleeves. What brand are they and what do you think about them? Do you do every run in them or just use them mainly for recovery? I've been having on and off calf issues for years and it seems diligently foam rolling is not always enough.

      Yes! I started wearing them last fall I think? They've seriously completely fixed my calf pain/tightness issues - highly recommended! I wear them for longer runs and occasionally for recovery if I feel like I need them. I'll sometimes wear them on my shorter runs, sometimes not - just depends if I feel I need them or not. I have the CEP brand ones.

    I'm usually all about getting in my workout first thing in the AM, but I'm with you.... Since its staying lighter longer and the suns been out I've had more of an urge to work out fter work!

    all of your eats look so delicious and colorful! i usually prefer exercising in the morning. it helps me to jumpstart my day, and i also find i have more energy in the morning!

    I usually run in the morning because my stomach handles it better, but because of school I've been having to run in the afternoons. I'm loving the sun being up later though, it makes it easier!

    I have been loving evening work outs lately too! I used to hate working out anytime except the morning, but my husband has been running with me outside in the evening the last month and I love it. I agree, the longer daylight is definitely helping!

    I prefer to workout in the morning because I'm not so restless all day. BUT, working out in the evening usually means more energy and more intensity. It's really a win win if you do either :)

    I'm up at 5AM riding my bike in the dark and I walk in the evening after a day at work. So, I guess I'm both. Wouldn't miss the morning ride though. It's my favorite time of the day.

    That salad does look incredible! I love salads that are chocked full of good things like that. I'm definitely a morning cardio exerciser but I do like lifting in the evening.

    I had such a fun/great/awesome run with you! It didn't even feel like we were working out. Thanks again for all the amazing advice. It was so fun to just chat and run through Carrboro on such a beautiful day. We're definitely getting together for another run before you leave!

    As of right now, I'm an evening exerciser since my alarm goes off at 5:30. But I'm DYING to make the transition into morning runs!! The few times I've made it happen, I'm much less stressed throughout the day and love relaxing after work.

    I leave for work at 5:30 AM, so mornings are out for me. However, even on the weekends or days that I don't work, I actually feel better exercising in the evenings. I am not much of a morning person.
