Thug Kitchen Tacos + The Cutest Cat

Morning, friends! Things are back to usual over here today after a city-wide snow day yesterday.

Since our internet didn’t go out, it was basically a normal workday, but it was fun having Matt working from home with me. 🙂 After getting some work done in the morning, we took a little walking break to check out the snow. I love how quiet and calm fresh snow makes everything seem. Very peaceful!

My track workout was (obviously) cancelled yesterday morning, so I enjoyed sleeping in! I don’t have access to a treadmill (and hate them anyway) and I actually felt like I was ready for a rest day, so I just counted the morning walk and a nice sunshine-filled afternoon walk I took solo as my exercise for the day. Perfect!

Part of the reason I was so sore was that I hit up CorePower Yoga on Monday with my buddy Karen! We did their sculpt class, as usual, which is like yoga + boot camp on crack in a heated room, and it was insane as always. Love it! I’m always so sweaty after the class that I bring all my stuff to shower. After, we hit Sweetgreen for lunch to catch up. Such a nice treat!

On Monday night, in light of the impending snowstorm, Matt decided to push his cooking challenge night up a day! As you remember, every Tuesday night Matt and I alternate making something new-to-us and interesting, and whoever is in charge does all the planning/cooking/cleaning (although usually we’re nice and help the other with the cleaning). It’s a fun tradition we’ve started!

Matt decided to make Lentil Tacos with Carrot-Jicama Slaw from the awesome vegan Thug Kitchen Cookbook, which I got for Christmas. Greatest tagline ever: “Eat Like You Give a F*ck.”

The tacos were very unique – more Asian-y than Mexican! The “meat” was a combination of lentils (Matt couldn’t find the black lentils it called for, so he used regular lentils) and mushrooms with some seasonings. The “salsa” was cilantro, jalapeno, basil, garlic, and various other things.

We both gave them two thumbs up. Healthy and light, but flavorful, and so unlike any tacos we’ve ever had! Yum.

Even better is we had leftovers to enjoy for lunch yesterday. 🙂

…Which apparently fueled Matt up for an epic Zara glamour shoot. I found a ton of adorable photos on my camera when I uploaded the food pics this morning!

I know I’m biased, but… man, she is cute. Also, that’s our breakfast table we always tell her not to sit on, obviously. Lol. She’s lucky she’s so cute. 😉

    I really like the idea of cooking a new meal once a week. I seem to stick to things that work but trying something different just once a week would be fun! Love your snow picture too!

      Ha, good question. He used red lentils, since that's what he found easily at the store.

        Ok. I'm a huge texture freak so I have issues with different types of lentils. I hate the texture of lentils in various recipes. I've found the red lentils will break down much easier into a "dahl" like substance. I use them in my red lentil curry. French Green lentils (different from the regular green lentils you find at Whole Foods) will partially break down. I use them in the Oh She Glows "Vegan Lentil Walnut Loaf" recipe. The reds will break down too much for that recipe. The regular green lentils won't break down enough for my OCD tastebuds so I I just stay away. LOL Those tacos look wonderful. I do believe I'm going to try them this weekend.

          You would like this recipe with red instead of black lentils, then! The lentils broke down a TON, so it was a lot more mushy than the original recipe looked in the photos. Still tasted great, though!

            Beluga lentils!!! They are black, tiny and hold their shape really well. There is a greenish, bluish French lentil variety, I find them similar. Both types keep a nice bite.

    Your cat is so cute! I have been trying to incorporate newer recipes into the rotation lately. I like the idea of picking a day of the week to do it. It's fun that you and your husband switch off :)

    The Thug Kitchen cookbook has been sitting patiently in my amazon shopping cart for months now. I love the tone, and I love that the recipes are seriously legit! Good food and good humor are always welcome in my kitchen. Love the cat pictures, too :)

    I love Thug Kitchen it makes me laugh all the time. I knew there was a cookbook but I havent had a chance to look at it yet. Nice job on HP! I was published too a couple weeks ago and it was super exciting!

    I just recently discovered Thug Kitchen (Love the tagline too!) and have been meaning to try some of their recipes. The tacos sound delicious, but definitely not something I would have thought of on my own. Trying new things is exactly what I love about using recipes from cookbooks, blogs, etc.

    Love the cookbook! My daughter gave the same one to me this past Christmas and we had the cauliflower tacos. My husband, the meat eater mostly, really enjoyed them! LOL! Anyhow, I really enjoy your blog as a fellow RD (I work primarily with a hugh dialysis population here in Central TX).

    Super random but... what do you feed your cat? We recently adopted our neighborhood alley cat and I obviously want to feed her the best stuff possible.

      We feed Zara mostly dry food - alternating between Blue Buffalo and Orijen. They're expensive but it's worth it for quality! For wet food, we occasionally give her Tiki Cat to mix it up - great brand if you go the wet food route. I did a ridiculous amount of research deciding what to feed her, so I hope that helps with your new furry friend! :)
