Trail Running and Red Beans & Rice

Good morning, friends!

We had quite the strong storms here yesterday! No tornadoes (apparently there were some near Raleigh?), just lots of rain, wind, and some thunder/lightning. I was working on my epidemiology take home final exam on my laptop when all of a sudden a HUGE crack of thunder sounded (I literally screamed out loud and jumped a mile) and our internet died. Fail! Now, if we plug directly in to the internet it will work, but the wireless won’t. Weird.

Anyway! Since we knew it was going to be nasty weather yesterday and Friday was gorgeous, Matt and I went for a little evening trail run on Friday after he was done with work 🙂

I love the trail we were on — it’s rocky and hilly in parts so you’re kept entertained by watching your feet 🙂

It’s been fun to just do low key runs lately and not worry about time and super long distances!

Other excitement so far this weekend included this AMAZING Red Beans & Rice dish that Matt whipped up:

Sadly, no specific recipe, but he basically just threw some chopped onions, minced garlic, and a little oil in a pan, then added green peppers, mushrooms, a can of diced tomatoes, and kidney beans and let it all simmer for about 20 minutes in a mixture of cajun-esque spices (cumin, paprika, black pepper, chili powder, and a little thyme and Cholula hot sauce):

He served it atop brown rice, which he also cooked with the spices.

Does anyone recognize the shape of the rice? Think old school video games… 🙂

Anyway, it was seriously delicious. Well done, Matt! I definitely need to recreate this sometime during the week — it was great as a leftover yesterday, too.

During the thunderstorms yesterday, Matt and I walked over to the movies and saw “Your Highness” (funny but stupid, haha). When we came out at 6 p.m., the skies had cleared and it was perfect and sunny! Awesome. We ended up meeting friends for dinner and drinks outside and then going to the driving range late night to hit some golf balls — such a fun, random night 🙂

I’m off to take a walk with Matt then meeting some of the girls for a group project meeting. Boo — it’s too nice out to do work 🙁

    the rice & beans dish looks simple, nutritious, and delicious! i'll have to try a concoction like that with all my leftover veggies :) that storm was not fun... my half marathon yesterday got caught in it! (thankfully it held out for most of the time i was on the course though)

    Great run girl!!! So beautiful outside, I wish we had scenery like that around here! Today I ran 10 miles for the first time in my entire life:))

    The face made me think Mario-related, but I think I'm wrong! Beans & rice look yummy though. Off to check out the about me page now :) I laughed when you said you went to the movies during the thunderstorms, since most people shut off their electronics and hide! :)

    Love your About Me page and so happy you and Matt are ok. The red beans and rice are a favorite of my husband's, so I fix them fox him when he request it. The trail is beautiful. P.S. Matt is such a good cook, you and he should open your own healthy food cafe.

    Have you tried resetting your wireless router? The same thing happened to us this winter; we had to hit a switch, turn it off, and then turn everything back on in a certain order. Your manual should have the info. :)
