Virtually Social Weekend

Morning, guys – how were your weekends? Everyone holding up okay? 

We had a virtually social weekend – some Zoom video dates with friends and family, and also two virtually social workouts. 

But first, let’s chat food! On Friday night, we decided some grilling was in order since it was so nice out.

Matt marinated the chicken in this really good smoky mustard moonshine grilling sauce from Aldi; the asparagus just had some olive oil, salt, pepper, and fresh minced garlic. The rice was some random leftovers!

Other dinners this weekend were pizza (ordered from Sicilian Pizza in Del Ray) – with some leftover roasted broccoli + salad:

And we ordered salads from Sweetgreen for dinner last night – Matt and I both wanted something lighter but we were out of greens and not in the mood to cook. No pic but it was delish – I love their kale harvest salad. 

As for other meals, I don’t have a ton of photos because we mostly had leftovers/random odds and ends from the fridge and freezer, but Matt did make us this amazing lunch feast one of the days. Super cheesy, buttery toast + scrambled eggs + bacon + the aforementioned roasted broccoli.

Besides the broccoli, we also had leftovers of the cheesy toast + scrambled eggs which I was happy to enjoy again! 

Riese and I also enjoyed my flour free breakfast pancake this weekend – the microwave version (details in the recipe blog post) – topped with pumpkin seeds (which Riese is obsessed with), chopped walnuts, strawberries, and cottage cheese. This is still one of Riese’s favorite breakfasts of all time – she always eats a ton of it and it really keeps her full which is nice!

Sidenote – speaking of pancakes, how brilliant are these whole wheat sheet pan pancakes that my friend Kath posted?! Going to try them ASAP – making them in a sheet pan is totally blowing my mind! Such a great idea. 

As for workouts this weekend, Matt and I joined his brother Drew for another Zoom video group workout class. Like his other classes we’ve done, this was a boot camp style workout with weights and it was really good – challenging but fun! Really loving these.

And yesterday I got in a virtual run date with my grad school friend Lauren, who lives in San Diego!

Lauren is one of my fave running buddies but we obviously don’t get to run together that often in person since she lives across the country, so it was fun to talk on the phone and catch up while we both ran! Thanks for the virtual company, Lauren! Her cute dog joined us too as you can see in the photo below. 🙂

I made it a little over 4 and a half miles.

Loving these virtual run dates because I have a hard time running alone, but I’ve discovered with someone to call at a specific time it’s really good accountability and also makes the run 1,000x more fun/easy since I’m distracted by chatting. Has anyone else been doing virtual run dates? They are fun, try it! It’s been nice to “run” with friends who don’t live here!

I’ve got a couple of virtual run dates lined up for this week, too… I’ve noticed such a big difference in my mental state for the day on days when I take time to workout (especially first thing) vs. days that I don’t, so I’m focusing on getting back into the routine and planning set times for workouts (with accountability – either a virtual class I’m signed up for or a call scheduled with a friend) moving forward. 

I will leave you guys with a photo of these gorgeous flowers that have really brightened up our dining room/kitchen the past few days! The flowers are via CSBouquets – the owner is a mom friend of mine, and she sources all the flowers from local farmers in the northern Virginia area. She is donating a portion of her proceeds right now to a local nonprofit + charities – just FYI if you are local and want to support the cause while brightening up your living space with some pretty blooms. 🙂

    I’m curious- is listening to the other person breathe heavily annoying on your phone run dates??? I’d love to do this but I feel like no one wants to listen to me panting. :)

      No, not at all! Give it a try! It's also nice because you can "run" with fast friends and go your own pace. :)

    I have been waking up SO TIRED from... lack of doing much? collective trauma? Combo of everything, that working out has been SO hard even though pre-quarentine I would rush out of bed for spin class . Do you have any suggestions? Glad you guys are doing ok!!

      Yeah, I was totally feeling that the first couple weeks of this as well, and had a hard time making the fitness happen. For me I've discovered, though, that getting back into a fitness routine has actually given me MORE energy - and having that routine again has been helpful and uplifting mentally, too. The key for me has been signing up for virtual classes at set times or setting times to do virtual run dates with people so that way I'm not just saying "eh, I'll do it later" and then it never happens. Good luck and hang in there. <3

    Great idea on the virtual run, will have to try that! Have been doing lots of virtual meetings by call, vice video, while walking the dog; great fun. Glad you continue to pack as much into a weekend as you did before social distancing!

    Ok when my toe is actually healed (whenever that happens ?) I will take you up on a run date! I want to get back into it for some Fall races.
