So Many Dishes

Hello, hello! Anyone else having a hard time keeping track of which day it is lately? I legit spent all of Monday thinking it was Thursday for some reason…

Anyway… today is Friday! Hi! 

First things first – are you guys going to make anything fun for Easter this weekend? Obviously we won’t be able to gather with family and friends unfortunately, but I’m thinking of still making something special just for us. My current plan is my Vegan Strawberry Scones, but we’ll see. Lots of ideas in my Brunch Recipes for Easter post if you want some!

Now, for this week’s food and fitness, plus some cute toddler pics for good measure. In related news: we have so many dishes when we eat at home every meal. Anyone else feel like they are constantly running the dishwasher/standing over the sink right now?!

First up: a really delicious seared salmon with orzo, feta, broccoli, roasted red pepper, and toasted pine nuts.

It reminded me of my Sheet Pan Mediterranean Chicken Thighs but with salmon instead of chicken thighs. So good!

Next up: a crispy tofu with brown rice, more broccoli, and a sweet and sour sort of sauce. This was a Sun Basket meal, but if you want stir fry recipes, check out this post: Easy Stir Fry Recipes.

I hadn’t made tofu in ages – forgot how good and easy it is! Sliced up small, coated with a little rice flour and a sprinkle of salt + pepper, and seared in a pan with a little oil until crispy.

We also had a pasta night this week – check out my Easy Pasta Recipes post for ideas! This version had a bolognese sauce made with ground beef we pulled out of the freezer, plus sautéed zucchini, canned artichoke hearts, and a little Italian seasoning. We made enough for leftovers!

Last night was a Sun Basket Thai turkey salad with basil, cashews, and cabbage. I added rice because it needed more carbs but the flavor was great!

For breakfasts, I took some inspiration from my Healthy Oatmeal Recipes post and made oatmeal (my usual banana variation) with blueberries, but I also stirred in some leftover diced steamed zucchini – the flavor didn’t change so it was a nice way to use it up and get in some breakfast veggies for all!

I also ate the last of the Make Ahead Breakfast Burritos we had in the freezer (this one had chicken instead of egg). I need to make more of these ASAP, it’s so nice having them on hand when I need something substantial but don’t want to or can’t take the time to cook anything!

We had avocado toast another day with bacon, a fried egg + pineapple. We bought a whole pineapple the other day and have been slowly making our way through it!

One last picture – a yummy steak salad! With beets, goat cheese, grapes, and thinly sliced fennel. This was ordered from one of my fave local cafes, Junction Bakery.

For fitness this week, Matt and I did two more of my brother-in-law Drew’s live virtual group boot camp classes. Riese sometimes pops in to join for a bit, but mostly she is thrilled to be allowed to sit on the couch and watch Daniel Tiger. 🙂

I also got in one short virtual run date (my new fave thing, where I call a friend and we both talk on the phone via headphones while we run) this week, with my friend Karen.

One really nice thing about running together virtually is that if I am not feeling it and want to walk half of it (see also: the watch picture pace below), it’s not a big deal! Great to catch up with her – we felt like we wanted longer to talk so we are doing another one next week!

Riese and I also did another little hike this week which was fun – it was gorgeous most of the week weather-wise and we are loving this tiny neighborhood trail we can walk to. Also: the overalls. Amazing, right? And yes, her hair is always in her face and she usually won’t let me put it up. I try, trust me!

Plus lots of very slow neighborhood walks with many stops for flower smelling. <3 We have discovered the red ones smell best. Big news.

I will leave you with a fun game idea if you have kids – all you need is some string! Have your child hold one end of the string and you hold the other, then you run and hide and they have to follow the string to come find you. It was Matt’s idea and super fun – Riese loved it!

Matt and I also started a puzzle this week which has been fun to do after Riese goes to bed! It’s a hard one and is going to take us awhile which is a good thing. 😉 It has been nice to have something to do before bed when I’m too tired to work, but not ready to get in bed yet and read, and not feeling like watching TV.

    Definitely have been running the Dishwasher more and using way fewer paper towels for snacks. I think it about evens out on the global impact scale :) I love reading about how others are getting creative with meals with minimal ingredients!

    While I appreciate that you need to run ads to support your blog, your new website is not enjoyable at all. I have 3 video ads running at the same time, I can't see your full pictures as I scroll and the loading time is absurd.

      Hi Kel (or Amy per previous comments?), thank you for your feedback - that surprises me as I have actually changed the ad settings a few days ago to make the website have LESS ads vs. my old site. So if anything it should be an improvement. Not sure why the load time is so slow, but will check with my developer. Thanks for reading and for your support.

        Hi...I will share as well the amount of ads/videos is overwhelming and hard to follow the content with so many breaks in between. I know ads are vital to your business but if they were just on the sides it would be great...thanks.

          Trust me, I wish I could afford to just have ads on the sides as well - I know it's a much better user experience! That said, it simply isn't possible financially. It costs a lot of money and time to keep a blog going, and I of course need to be compensated for my time (along with my 3 part time contractors) as well. To keep my blog 100% free for you guys, the readers, this is the way it has to be. I really appreciate your support, and please know I did already dial down the amount of ads in my settings (spacing them out more, allowing less per post, and also optimizing for page speed vs. revenue) a couple weeks ago. I hope it at least made a small difference. Happy Easter (if you celebrate it) and thank you for reading!

          Also please know that I have always opted to not activate a couple of ad options I find extra annoying personally (like ads ON my photos, pop ups, etc.), even though they are extremely lucrative. So... I'm trying, but I have to be smart for my business, too. It's a tough balance! :)

    Love Brené’s podcast too! I really loved the FFT episode, especially when she went into the COVID FFTs. I’ve also been working on a puzzle and am going to do a puzzle exchange with some colleagues so we can all share. Hope you have a great weekend!

    Two things! 1) you’re lucky riese will Walk and hike! I have a four year old daughter who the best way I can describe is “low energy” ... She’s always been like that from the day she was born. Usually I’m grateful I don’t have a hyper kid but sometimes it’s a downer... She’ll only walk for a few minutes but then say that she’s tired and doesn’t want to go on...it’s just not worth the fight!! 2) You are obviously much more fit than me because I would never be able to talk and run at the same time… I am so out of breath even running slow (currently at a 12 min mile) that it would be impossible!! Ha ha

      Aw bummer - will your daughter relax in a stroller or backpack or wagon or something so you guys can walk? I love that Riese is so high energy, but it's also hard because she really fights sitting in the stroller or sitting at all at any time. ;) Pros and cons for sure! Re: the running and talking, I think I'm just really used to it since I always run with other people, so all my runs involve chatting, either virtual or not! :) Give it a shot - you will get used to it!

    Easter dinner for myself and my husband: slow cooker pork tenderloin, roasted rainbow carrots, baby potatoes and salad, all locally sourced. I’ll be making a small carrot cake, too. Question: please tell me the model of your Garmin. Thank you.

      This sounds amazing! Enjoy :) Re: the Garmin, it's the 910xt but it's really old! It's technically a triathlon specific watch because it's waterproof so you can swim with it. Here's the newer model version.

    Love that Riese is so into the flowers! So cute! Sidenote: remember when we saw that painting you are doing the puzzle of in real life in Florence at the Uffizi? That was.... 11 years ago. How is that true???

    Ahh, the hair in the eyes phase. So ANNOYING. I do not miss the arguments ha. I've introduced my 8 year old to the joys of avocado toast with everything but the bagel seasoning.
