What Did You Pack for Lunch Today?

Morning, friends!

Another day, another quick packed lunch. Well, this was actually yesterday’s packed lunch. It was delicious!

I packed up a repeat of lunch from Monday and threw together a salad of mixed greens, sprouts, and avocado, topped with a mix of brown rice, quinoa, chickpeas, and some lemon juice, olive oil, salt, and pepper. Love this combo.

I also packed an orange and some carrots:

And my very last Vegan & Gluten Free Granola Bar, which I enjoyed as a morning snack. I need to make more of these ASAP!

I was home by about 3 so I didn’t have to pack an afternoon snack. All together and ready to be put in my lunch bag:

I don’t have class today, but I have a lot of school work to get done. I have a presentation to give and two assignments due tomorrow, plus two big assignments due Friday. Time to get after it! I have plans to reward myself with a break for Franklin Street Yoga later on — yay!

    I usually take the same thing to work most days as it's super easy and I can spend more time making something better at home for dinner later--a big bowl of brown rice with chickpeas, veggies, spices and Earth Balance. About 30 seconds in the microwave at the office and I'm good!

    I'll have to start packing lunches in the fall, when I go back to grad school. Until then I've been lucky enough to not need to!

    I've seen a lot of lemon juice + quinoa + chickpeas lately...my tastebuds are intrigued! ;) I packed one of my fave salads today - tempeh, mixed greens (arugula, spinach, etc), avocado, red & orange peppers, onion & salsa. Got some carrots & hummus for crunch on the side.

    Lunch today is a veggie * hummus sandwich on multigrain (spinach, carrot, cucumber, zucchini) with a side of pineapple chunks. Though right now I'm craving bacon. :\

    Sounds like a yummy lunch! Today I have tuna mixed with spicy mustard, carrots, an apple, hummus and some rye bread!

    I packed a gluten-free pasta casserole that I whipped up last night. Gluten-free quinoa noodles, chopped cilantro, caramelized onions, sliced cherry tomatoes, chopped jalapenos, a bit of lime juice, and Al Fresco jalapeno chicken sausages- all covered with mozzarella cheese and baked! I'm getting prepped for Cinco de Mayo obviously :)

    I just ate left over manicotti that I made yesterday for supper and a small garden salad. Ymmmmmmm. One of my Italian mother's recipes. I'm fixing something more healthy today for supper. I will thumb through my fANNEtastic food recipe book. I'm thinking baked chicken.Have a terrific Wednesday.

    I love packing my own lunch. Its so nice to be able to bring a few of my favorite foods and ingredients with me to work. This salad might be a new favorite of mine to bring. I'm loving the sprouts, avocado, and fiber-licious chickpeas. Yum!

    I am heading home for lunch to re-heat a leftover Cooking Light veggie croquette. I'll have to add a salad or soup though to round it out. I love leftovers!

    Yum! I didn't have to pack my lunch today - I got to enjoy lunch at my friend's house (where I'm visiting right now!). Salad topped with hummus and a dash of salsa! Tasty and easy.

    Lately my co-worker and I have been making smoothies (fruit/protein powder/cottage cheese/spinach etc) for lunch. I brought in my magic bullet and store it under my desk. Everyone looks at us like we're crazy as we carry all our stuff into the break-room but oh well.

    Hi Anne! (: Just wondering, how do you keep your avocados fresh all the way till lunch? When I pack avocado in my lunch, it usually turns brownish by lunch time and while it pretty much still tastes creamy and delicious, it's just not a very nice sight! Thanks! (:

      If they are refrigerated they shouldn't get too brown! As long as they still taste good I don't really care :)
