Quick and Easy Quinoa & Bean Stuffed Red Peppers

Dwindling resources in the pantry and fridge forced me to come up with something creative for lunch today!

001

Introducing:

Quinoa & Bean Stuffed Peppers

(makes one serving)

Ingredients:

  • 1 pepper with the top cut off & seeds cleaned out
  • 1/2 C cooked quinoa
  • 1/2 C kidney beans, drained & rinsed
  • A couple shakes each of: cinnamon, tumeric, curry powder, chili powder, and cracked pepper
  • Feta cheese

Instructions:

Mix together the quinoa, beans, and spices. Place into the pepper, top with a sprinkling of feta cheese, and enjoy!

If you want to heat the pepper + contents, I’m sure that would be delicious too. I was just too lazy ;)

Pepper explosion!!! Mmmm

I enjoyed it with a green smoothie :)

Time to get back to studying! Another Anatomy & Physiology quiz this afternoon.. bah.

But first, a quick announcement:

Do you guys remember Jessica, one of my BFFs that I visited in Washington State back in January?

027

She has taken on an incredible challenge — on September 24th, she will be participating in the Susan G. Komen 3-Day for the Cure in Seattle. This will involve walking 60 miles over the course of three days and camping out at night. Wow!

3_day_for_the_cure

Jessica has pledged to raise $2,300 for the cause — proceeds go towards breast cancer research and community programs. Her mom was recently diagnosed with breast cancer so this cause is obviously very important to her! Jess is one of the sweetest, most thoughtful people I know and she said she feels this is the least she can do for all the wonderful, inspiring women she’s met at the hospitals. If you have an extra few bucks to spare, I know your support would mean a lot to her (and to me!). Click here for her donation page. Thank you! :)

Have any of you ever done the 3-Day for the Cure? If so, I’m sure Jess would love any and all advice about what to expect, how to train, etc., so please comment away!

Stay tuned — I’ll be back tomorrow with a GIVEAWAY! It’s been too long :)

that’s so great she’s doing the 3-day for the cure! and your pepper sounds great…although I would definitely heat mine up…mmmmmmm, melty feta!

I haven’t done the 3-Day but I did do the DC Avon 2-Day walk last year! I trained for about 4 months and slowly increased my mileage. I think that reason, along with plenty of cross training (elliptical, YOGA, pilates) and good shoes helped me avoid injury. Good quality running socks kept my feet comfy and she should train (and walk) in running shoes over walking if she has the option. I’m happy to share more of my experiences offline too!

I love stuffed peppers. Last time I made one I put smoked salmon, white beans, and corn inside of it. Delicious!

I’m making stuffed peppers tonight! Funny.

YES – feta cheese, such a good idea. I had stuffed peppers on my meal plan for tonight and now I’m totally going to pick up some feta on the way home from the library.

Mmmmmm…food within food is always a good idea :-)

Haha, OMG I just made stuffed peppers tonight! We must have been telepathically channeling our food cravings. That’s so weird! :)

I commend your friend for participating in this worthy and amazing event. My friend does this every year too. I think one of these years I will join her!

Hope you’re having a great week!
