I made quite the delicious creation on Saturday. If hummus and guacamole mated and had a love child… this would be it:

I really wanted some hummus, but I didn’t have chickpeas or tahini on hand – enter Spinach & Avocado Cannellini Bean Hummus!

It was delicious – nice and creamy from the avocado and a great way to sneak in some extra veggies :) This would be such a fun appetizer at a party!

Spinach & Avocado Cannellini Bean Hummus

Ingredients:

  • 1.5 C (one can) cannellini beans, rinsed and drained
  • 1 C fresh spinach
  • 1 Tbsp. olive oil
  • Half a large ripe avocado
  • Juice from 1 lemon
  • 2 cloves garlic
  • Salt & pepper to taste

Instructions:

Toss it all in a food processor and whirl away!

I just used some of it to pack up a fun lunch for work today! I spread some on a whole wheat pita, topped it with smoked salmon and dried drill:

And then added on some broccoli slaw for crunch and some (unpictured) mixed greens for more bulk :)

Nom. Give it a try :) I bet it would be delicious with diced tomatoes as well!

I also packed a honey Oikos Greek yogurt (never tried this kind before!):

My #1 tip for eating healthy during the work week – BE PREPARED!!! If I don’t have enough snacks, all hell breaks lose. ;)

I’m off to work and then class this evening – I love my Nutrition class but I can’t wait to not have to sit in class all night on Mondays after sitting at work all day! At least I got in some movement this morning – I had a great, sweaty workout at LA Boxing :) Funny story – this morning at LA Boxing I ran into my friend Alicia who I hadn’t seen or talked to in awhile – she was just finishing up the 6 to 7 a.m. kickboxing class. She apparently just did a demo on Saturday after reading about it on my blog, and now she’s officially a member :) Yay! She said she was looking for a way to mix up her workouts. Hear hear! (Hi Alicia!)

      Your dip sounds awesome! I love the avocado-hummus combo – I have, in the past, put a spoonful of hummus on top of a half of an avocado… yum!

        I made the dip on Saturday, and just took pictures of it spread on the pita this morning, so no browning yet! I don’t think there will be, either – I bet due to the lemon juice!

      Yum! I love me some Kashi bar for a snack! My favourite’s the dark chocolate coconut, but the cherry’s on my list to try. Did you ever try a Cherry Ripe chocolate bar while you were in Australia? I’m envisioning the cherry Kashi bar as a mix between a Cherry Ripe and a granola bar and it’s making me hungry : )

      i just started working again and I forget how to pack a lunch – I am so used to eating on the fly staying at home that i need to retrain my brain to think ahead =)
