This morning UNC summer session classes started up! My MPH-Nutrition classmates and I are taking a Public Health Nutrition class this summer in tandem with doing our public health/community internships. This week is just class, but from next week on, we’ll have class on Mondays and our internship the rest of the week. It’s going to be a busy summer but I hope it will be fun and interesting, too! I think I’m going to like the class — it seems like there will be a lot of discussion/interaction/collaboration, which I like, and sharing experiences from our internships and past jobs as well. I’ll be working at a local community-based health organization and I’m really excited to get out into the field, help teach some nutrition-related classes, and interact with the community! I’ll be sure to share my experiences, of course
We got out of class at noon today since it was the first day — yay! I had a meeting after class and arrived home at 1, ready to ATTACK lunch.
5 minutes later:
Yum! Using my lovely full fridge from all the groceries I bought yesterday, I threw together a quick and easy wrap!
That would be an Ezekiel wrap topped with hummus, tomatoes, avocado, tabouli, and kale.
As usual, it was obviously completely exploding when I tried to close it. Messy wraps = more delicious wraps. Duh.

On the side, I sliced up an orange, soccer practice style. I’m 5 years old. What of it?
Plus a glass of milk. Since we’ve already established that I’m 5 years old.
With lunch, I started reading the Pioneer Woman’s cookbook! My mom gave it to me while I was home over the weekend. I don’t usually read her blog (I find it very overwhelming, although the photography is beautiful!), but so far I’m loving this book! I love that she weaves in personal stories and that there are step by step photos of all the recipes. I’m a sucker for lots of photos in recipe books.
Have any of you guys read it? I know it’s been out for a couple years now!
Aaaanyway — now that I’m done with lunch I’m heading out to run some errands! Target, here I come. Here’s hoping that I don’t get sucked into the black hole that is normally Target and emerge 5 hours later, disheveled, carrying at least 10 large bags of things I didn’t even know I needed to buy.
