Hummus & Tabouli Wrap of Deliciousness

Hi friends!

This morning UNC summer session classes started up! My MPH-Nutrition classmates and I are taking a Public Health Nutrition class this summer in tandem with doing our public health/community internships. This week is just class, but from next week on, we’ll have class on Mondays and our internship the rest of the week. It’s going to be a busy summer but I hope it will be fun and interesting, too! I think I’m going to like the class — it seems like there will be a lot of discussion/interaction/collaboration, which I like, and sharing experiences from our internships and past jobs as well. I’ll be working at a local community-based health organization and I’m really excited to get out into the field, help teach some nutrition-related classes, and interact with the community! I’ll be sure to share my experiences, of course :)

We got out of class at noon today since it was the first day — yay! I had a meeting after class and arrived home at 1, ready to ATTACK lunch.

5 minutes later:

001

Yum! Using my lovely full fridge from all the groceries I bought yesterday, I threw together a quick and easy wrap!

004

That would be an Ezekiel wrap topped with hummus, tomatoes, avocado, tabouli, and kale.

006

As usual, it was obviously completely exploding when I tried to close it. Messy wraps = more delicious wraps. Duh.

005

So good — one of my favorite combos :)

On the side, I sliced up an orange, soccer practice style. I’m 5 years old. What of it?

002

Plus a glass of milk. Since we’ve already established that I’m 5 years old.

008

With lunch, I started reading the Pioneer Woman’s cookbook! My mom gave it to me while I was home over the weekend. I don’t usually read her blog (I find it very overwhelming, although the photography is beautiful!), but so far I’m loving this book! I love that she weaves in personal stories and that there are step by step photos of all the recipes. I’m a sucker for lots of photos in recipe books. :)

010

Have any of you guys read it? I know it’s been out for a couple years now!

Aaaanyway — now that I’m done with lunch I’m heading out to run some errands! Target, here I come. Here’s hoping that I don’t get sucked into the black hole that is normally Target and emerge 5 hours later, disheveled, carrying at least 10 large bags of things I didn’t even know I needed to buy.

Have a good one :)

LOL I find the Pioneer Woman’s blog overwhelming too! Glad I’m not alone. I only look at it when people link back to her recipes

Target has a tendency to suck u in and take your money!! Now that I have a one year old, she saves me a lot of money. Whenever we go into Target she gets cranky? Maybe the fluorescent lights? Anyway, she keeps me on budget.

The wrap looks amazing – I always keep a frozen loaf of Ezekiel bread but unfortunately I haven’t seen the wraps in lower Alabama! I tried to read the Pioneer Woman’s blog also – super over-my-head (I’m a very simple “cook” with minimal ingredients) Good luck with classes and your internship!

Wrap looks gorgeous! I love a fully stocked kitchen – makes a quick lunch so easy!! Just got sucked into the Target black hole – and emerged $45 poorer but who can resist Strawberry Basil Vinaigrette!! Could have been a lot worse I guess :)

Share your thoughts on the cookbook, please! I love some of her recipes.

I’m the same way with Target. I try to avoid going near it when I run errands because I know I can’t walk away without buying at least one thing.

I find Ree’s blog very hard to read too! I never know where my eyes should go, why the pages are so detailed and include so much. Ahh too much for me.

I feel the same exact way about Pioneer Woman’s website. Great content, but i just don’t know where to start! That wrap looks delish, I’m so hungry right now!
