Simple Baked Oatmeal Recipe

Good morning and Happy Valentine’s Day! My friend Lauren made us this baked oatmeal for breakfast on Sunday morning in Georgia; it was so delicious (and easy) I knew I had to share the recipe.

Baked Oatmeal

Makes ~4 servings

This simple, nutritious, and versatile breakfast recipe is perfect for a group brunch or to make ahead so you have a healthy breakfast ready to go during the week. Enjoy plain or topped with yogurt or extra fresh fruit. Double (or triple!) the recipe for larger groups.

Ingredients:

Dry:

  • 2 cups uncooked quick-cooking oats
  • 1/2 cup brown sugar, packed
  • 1/3 cup dried fruit (we used raisins)
  • 1/4 cup chopped nuts (e.g. walnuts or almonds; optional)
  • 2 Tbsp. cinnamon
  • 1 tsp. baking powder

Wet:

  • 1 & 1/2 cup skim or low-fat milk
  • 1/2 cup applesauce
  • 1 very ripe banana, chopped (optional)
  • 2 Tbsp. oil
  • 1 egg, beaten

Instructions:

Preheat oven to 375.

1) In a large bowl, mix dry ingredients. In a separate bowl, mix wet ingredients. Add wet ingredients to dry, stirring gently until mixed.

2) Coat an 8-inch baking dish with cooking spray; pour in batter.

3) Bake for 20 minutes; fork check to test doneness. Serve warm.

This recipe was quite the crowd-pleaser — I’m totally making it next time I have houseguests — or just for myself and Matt some week! It’s nice because it’s quick and easy to make (and healthy!), but more exciting than just having oatmeal. :)

    I love baked oatmeal! I will sometimes cook a big batch, cut into single servings and warm up each morning! Quick, easy, delicious, and most importantly- nutritious!!!

    Anne, I did the baked oatmeal thing according to your instructions and it was delish. My husband couldn’t get enough of it and that is really saying something for him. He is usually an egg, grits, bacon or sausage man, but he loved it. I did add some figs on top. He had two helpings. Luckily he is in tip top shape and is a runner. He wants me to try and run with him but I like to walk briskly because I am bosomy endowed.Teehee. Don’t want to get a black eye Heehee

    Oh this looks delicious, definitely going to bookmark this for when I’m back home. It looks like such an amazing breakfast, I would be a very happy girl if I had some of this on my plate tomorrow morning! Do you think it would keep quite well in the fridge and would it be okay to warm it up again the next day?

    I love your blog, I have read it for awhile, but never commented until now!!:-)
    I have a few questions….
    Can you use old-fashioned oats or do I need to buy the quick cooking for this recipe?
    Do you know would I have to double or triple it to fill a 9 X 13 pan?
    What fruit works best in it?

      Hi Laura! Old-fashioned oats will work just fine. I’m not sure how much you would need to fill a 9×13 pan – but I would guess double. We used raisins for the fruit, but frozen or fresh blueberries or dried cranberries would also work well!

    Just made it – it’s REALLY good – I didn’t have any overly ripe bananas and I wish I had as I think that would have made it even better – so in the a.m I’m going to slice some banana for the top – but overall I may have found a new addiction

    I made this last night for supper (I’m on a breakfast-for-supper kick) with almond milk, chopped almonds, banana and craisins and it was great! When I make it again, because there will be a 2nd time), I think I may add some flax and cut back on the sugar since it seemed a bit too sweet for me. Just thinking about all the various fruit combinations you could do…endless! Mixed berries, apple & craisin, peach & mango, pear & fig…

    Holy cow is this ever delicious!!! My mouth has been watering for this all week and it truly exceeded my expectations. I added extra fruits and nuts and also some quinoa flakes for extra protein. :)

    Just made this for breakfast and it was delish! We didn’t have any oil so I left it out and we didn’t even miss it! My husband also added some toasted coconut and cashews. Yum!

    Question: I just made something like this last night–a similar recipe from another website. It came out kinda mushy. Should it have a cake-like texture? I baked it for an hour and it just never firmed up.

    I am obsessed with Baked Oatmeal! You can do so many variations with it! I recently made a strawberry, walnut, chocolate chip version and it was delicious. I am loving this recipe so I’ll have to try it soon!
