Back to Work!

Hello my friends! Matt and I are back to work today – sad the holidays are over, but also looking forward to getting back into a routine. 🙂

We got back from the eastern shore on Sunday in the late afternoon; unfortunately by then I had come down with a cold! I felt it building a bit on Saturday and I’m sure the alcohol and late night didn’t help much. Soup it was! Matt made us a yummy homemade chicken, veggie, and rice creation that hit the spot for dinner (and lunch the next day, too).

Dinner was followed by some couch time and an intense drink Matt made to help fix me up – it was apple cider vinegar + lemon juice + turmeric + fresh ginger juice + hot water. Whoa! That will wake you up! I definitely think it helped. 🙂

An early bedtime and a nice long sleep helped, too. As did having an extra day off yesterday! Matt and I spent the day doing stuff around the house – taking down our Christmas decorations (boo), tidying up, unpacking, doing laundry, etc. We also baked some muffins! Recipe coming in a couple weeks. 🙂

I also spent a few hours doing work so today wouldn’t be as overwhelming – catching up on emails, writing + publishing my weekend blog recap, starting a draft of today’s post, and also updating my AnneTheRD business/nutrition coaching website with new photos! As I mentioned previously, I hired Taylor and Ben Photography to take some new professional photos for me and was really excited to get the final photos back last week. I love how they came out!

As for last night, we hunkered down on the couch and watched a documentary Santa brought us called Meru.

Have you guys heard of it? It chronicles the first ascent of the “Shark’s Fin” route on Meru Peak in the Indian Himalayas. It’s really well done – and super intense… even as an adventure lover I can’t even imagine doing (or wanting to do) something that crazy. Highly recommend checking the documentary out – it was really good!

I really wanted to get up and go to one of my favorite workout classes (or the track to see my track buddies) this morning after all the travel we’ve been doing lately, but I figured I should give my cold a little more time. So instead I enjoyed sleeping in a bit and then ate my flour free breakfast pancake in microwave form (it takes about 2.5 minutes) with some berries and sprouted pumpkin seeds on top. Yummy.

I feel better today and I’m hoping I’ll be all set and back at it with the workouts by tomorrow!

    Love the sounds of that documentary! I've never heard of Meru Peak before that sounds like an intense adventure.

    sorry to hear that cold got you. all the traveling and alcohol are not easy to handle. I'm intrigued by that movie. I love hiking, climbed up kilimanjaro so i can totally relate to that intensity. will look for it.

    I watched the Meru documentary a few months ago - intense, but so well shot! I would never go mountain climbing, but I'm a sucker for those kinds of films/books. You might also dig the documentary "Sherpa".

      Have you read "Into Thin Air"? That's my absolute favorite - so well written. It's by the guy they interview in Meru -- Jon Krakauer.

        Yes! Read it when it was originally published - "Into Thin Air" was like a gateway drug to me for all things mountaineering. :)

    Colds are the absolute worst during and after vacation. Smart idea to just rest it out. For your breakfast pancake, do you taste the banana or not too much? I really want to try it but am not a banana fan unless it's banana bread. Any thoughts on what I could use to replace it?

      You do taste the banana, but if you like it in banana bread you might like it here too? Give it a shot! I don't think there'd really be a good substitute unfortunately!

    Aren't the holidays weird? The whole time the holidays are here I'm half thinking "this is so great I love this, how awesome" the other half of the time I'm thinking "when is this going to be over so I can get back to my routine!" Internal battle finally over! ha ha your pictures look amazing!

    Feel better soon! Great professional shots! A little off topic, but....Just wanted to stop in and say thank you for inspiring me to try sauerkraut again after a decades-long self-imposed ban :) It's delicious, especially knowing how good it is for me, too!

    I would love to know the recipe for the drink! I want to get into drinking ACV so I have several "recipes" hoping I'll find one I like! Would yours be safe enough to drink daily?

      I think you could definitely have it every day! Unfortunately Matt didn't measure anything, though, so all I know is that he used those ingredients I mentioned. If we make it again I'll ask him to be more scientific about it so I can share! :)

    The pancakes look great also looking at the chicken crock pot soup, was wondering if I could use rice flour instead of regular flour also maybe almond silk milk ?
