Bottomless Pit Monster

ROARAARARARARARARAR!!!!!!

said my stomach.

 

Nothing could subdue it. Certainly not my lovingly packed lunch that kind of looks like it has eyes and is looking at me:

On the menu today was a couple clementines, a bit more of my leftover kale and red cabbage salad with some avocado on top…

And a delicious egg, black bean, salsa, and spinach sandwich. Hell yes you read that right. Salsa is back with a vengeance!!

To save time (this lunch came together this morning in 5 minutes flat), I prepared the eggs in the microwave. I broke two whole eggs into a bowl, whisked until mixed, and then popped them in the microwave for a minute and a half. Perfecto!

I put the cooked egg patty (topped with a little salt and pepper) on top of a whole wheat pita (toasted, of course!).

Then I added black beans (which are awesome with eggs by the way)…

Then salsa, obviously…

And then I topped it all with a MASSIVE handful of spinach that I microwaved for about a minute til it was a little wilted.

Deeeeelicious.

And normally this would have been the perfect lunch (followed by afternoon snacks of course), but I went to the gym this morning before work (pumped some iron… no big deal) and forgot how HUNGRY that makes me the rest of the day!

I ate breakfast this morning at home, then when I got to work I had a massive thing of black tea with tons of skim milk (my favorite! no sweetener needed). Then, I ate my sandwich at 11:30 a.m. There was a large amount of willpower involved in even waiting that long. At noon, I ate my clementines. This was getting dire. At 12:30, my coworker asked if I wanted to walk over to Corner Bakery with her. Clearly I went and got a second lunch — a big bowl of delicious lentil and vegetable soup and a roll! I finally ate my salad around 3, followed by an apple cinnamon Cliff Z bar at 4.

Finally, the stomach gods were satisfied.

My coworker was highly entertained by my 12 meals.

Anyway. Is it time for dinner yet? 😉

    hmmmm I have been starving all day as well, it could have been the work out, or it could be me finding ways to not work on my homework, probably a little of both

    I have days like this all the time, but its usually followed with a day where I'm abnormally not very hungry. I really think it all balances out. We just booked our room for DC in April for the race. CAN"T WAIT!!!!

    ROARRRRRRRRRRRRRRRRRRR!!!!!!!! I've been a bottomless pit all day too. Why aren't you here? You know how we roll with 9 meals ending with black eyed peas at 1 am! What what! OTR!

    I have recently started working out in the mornings and it really does have a huge impact on my appetite the rest of the day. I usually just can't get full. I tried to help the problem by adding brown rice and protied to my lunches. Is seems to have helped.

    HAHAHA! We all have days like that! I am having a day kind of like that, which is odd since I didn't even workout today. I can't tell if I am hungry or the popchips in the kitchen staring at me are making me think I am. You breakfast looks awesome!

    Hi Anne. The sandwich looks delicious!! I am in school as well and (try to) pack my lunch every day. Question- did you refrigerate the egg sandwich before lunch? Or how long between when you made the egg sandwich to consumption was it not refrigerated? I'm always in need of portable lunch ideas! Thanks :)
    We have a fridge at work so the egg sandwich was waiting in there until I was ready to attack ;) It was only unrefrigerated (is that a word?!) for about 30 mins when I was driving to work. :) I'm sure an hour or two would be fine, though. -Anne

    You inspired me to have eggs with black beans this morning! (along with avocado, goat cheese, and hot sauce). Deeelicious. I even sprinkled some cumin on the beans, just for you ;)

    I have days like that too :) It's kinda fun to eat all of that and actually be hungry and not be just eating to eat. And i've never thought of putting beans and eggs together but it sounds good!!!
