I heart salsa

I’m officially obsessed with this deconstructed burrito that I created a couple days ago. So obsessed I had it again today for lunch, with a couple small changes 🙂

In the mix today was a serving of quinoa, chopped green pepper, black beans, and cilantro, with the extra addition of avocado and, instead of regular old salsa, this awesome Pace Picante Salsa that Foodbuzz sent me to try out as part of their Tastemaker program.

Delicious! The flavors went perfectly together and the salsa had a tiny bit of spice, but not too much 🙂

With my Mexican-style feast, I had another new obsession:

That would be a mix of equal parts nonfat plain greek yogurt and 2% cottage cheese, topped with unsweetened applesauce, cinnamon, raisins, and pumpkin seeds. OMG.

So good!

Anyway! I went to pilates this morning at the gym and now I’m off to go mail a bunch of textbooks I sold online before heading to class! Today’s class is Anatomy & Physiology. Should be lots of memorization… yikes.

Last night’s Nutrition class was great (minus the massive traffic getting there… gotta love DC) — I love the professor (doesn’t that make all the difference?) and the schedule of what we’re doing sounds interesting and fun. I can’t wait to become more knowledgeable about nutrition. And of course to share what I learn with you all! 🙂 One of our projects later this semester will be tracking three days worth of what we eat and analyzing all our stats. I’ve never tracked what I’ve eaten before like that so I’m really curious to see how I stack up in terms of getting nutrients, the balance of carbs/protein/fat, etc! Should be enlightening 🙂 Would you all be interested in seeing details about this on the blog?

    Ha, party in a bowl, I love it! :) Pilates is awesome - totally depends on the instructor, like with most exercise classes, but I'm a huge fan. It's amazing for toning your core/abs. -Anne

    Definitely keep us up to date with the nutrition class! I did that for 1 day over the Summer. It's a bit tough even for that short a period, but basically I found out I was eating a ton of carbs, but the same amount of calories I would have guessed. I guess carbs make sense, though I always would have guessed I overdue it on the fats

    Um... Can you please come make me that creation for lunch?! Haha! It looks great! I love salsa too! One of my favorite foods! Glad you are excited about your nutrition class! I think liking the class makes all the difference in school. I would really like to see the 3 day nutrition stats when you do it! I think it will be very interesting!

    OMG i'm so excited to see cottage cheese on your blog!! i was beginning to think i was the only one who liked it... and it was starting to feel like a dirty little secret! so thanks for letting the cottage cheese out of the closet! haha

    Your deconstructed burrito looks better than any kind of "constructed" burrito I have ever seen. Awesome! Glad you like your class. Minus the commute. Ugh, can't imagine that drive could be enjoyable.

    Haha I would love to see the details!! The college that I go to doesn't offer nutrition but i'd kill to take a nutrition class - I'd love to learn about anything and everything from your class! And you are so right, the professor is what makes the class or breaks it for me. If they are good, the class will be good.

    I have a similar assignment to do for my nutrition class (except mine's 4 days). Are y'all using any special software of just MyPyramid or what? We can buy a software called EvaluEat if we want, or we can just use the freebie MyPyramid. Interested in seeing what y'all are doing!!
