Chilly Weather Food & My BFF’s Baby Shower

Gooood morning, friends! It sure is cold out there. Brrrr! Good day for indoor exercise. Yoga, please!

In honor of the cold weather, hot oatmeal is back in business. I’ve been so obsessed with my High Protein & Flour Free Breakfast Pancake that I haven’t had oatmeal in ages, but yesterday it just seemed right. Yesterday morning and this morning, I whipped up a batch of my Pumpkin Pie Oatmeal. Made in the microwave and delicious! Yum – hot blueberries are the best. I stir them in right after taking the oatmeal out of the microwave!

I also busted out some leftover Veggie-tastic Minestrone Soup from the freezer for lunch while watching the Inauguration festivities on TV yesterday. I was thinking about heading downtown to see them in person, but Matt was stuck at work and I’ve been feeling a cold coming on, so standing around in the freezing cold by myself (or attempting to find friends among the masses) didn’t sound all that appealing! Soup and TV, on the other hand, did.

With my soup, I also had a simple salad. A baby spinach/arugula base with peppers, tomato, canned beets, avocado, and goat cheese. Plus balsamic vinaigrette on top!

In other news, I attended my BFF’s baby shower over the weekend! It’s hard to believe that the girl I used to gossip with about boys, have sleepovers with, and talk on the phone nonstop with when I was 15 years old is now going to have a baby. Sniff, sniff. How time flies!

My high school BFF Jenny (and matron of honor in our wedding) is due to have her first child in March, so her family hosted a baby shower for her over the weekend. I arrived a couple hours early to help chop veggies, prepare mini sandwiches, and organize the spread, which was pretty awesome!

In case you couldn’t tell, she’s having a girl. 🙂 I loved these cool paper flower ball thingies (that’s a technical term) hanging above the table! Pinterest-inspired, apparently.

Baby girls are so fun to shop for – the presents were all freaking adorable. Lots of pink, cupcakes, tutus, ducks, etc. Cue the “awww!” I got her a bunch of adorable little outfits, some insanely cute leggings, and Sophie the Giraffe, which according to my other mommy friends is the best thing ever for teething.

After the presents extravaganza, we ended the shower with this adorable onesie decorating station! Cool idea, right?

I made one that said “Will Crawl for Milk” as an homage to my fANNEtastic t-shirt shop! 🙂 Hehe. Jenny picked it as her favorite so I won a Starbucks gift card & cup! Fist pump.

And now, alas, the long weekend is over and it’s time to get back down to business. This week is dedicated to seriously starting to study for the RD exam. I made some good progress on the whole starting up my own business stuff last week, but zero studying has happened so far… must change that. Sigh.

    Hi Annie, I like to make up a batch of steel cut oatmeal the old-fashion way on the stove. It takes 30 minutes but once I have it, I store the remaining three servings in the refrigerator and I heat those in the microwave as I need them. I usually add blueberries or sliced apples and chopped walnuts. Here's my thought. Do you think that I could add the canned pumpkin at the end of the original cooking process? I don't see why not but I was wondering if you knew of a reason it wouldn't work. Thank you. I really enjoy your blog.

    Love all the pink decor! I agree, little girls are so much more fun to shop for. I miss having a little girl to dress up. Mine are too old to let me pick out their clothes. :-(
