Corn Tortillas + Toaster = Non-Fried Chips!

Goooood morning!

As much as I don’t love the dark mornings, the bright evenings are making this whole daylight savings thing time worth it. 🙂 Last night, my friend Lindsey and I took advantage of the beautiful evening and played tennis!

We hadn’t played in ages — it felt good to get back out there and enjoy the weather! I’m also officially in love with the New Balance running skirts (they sent me another one in the massive package a couple weeks ago) — so cute and comfy. 🙂

Lindsey’s husband, Tim, and their adorable baby boy were out for a nice walk in the neighborhood and stopped by to say hello while we were playing. Hayes (their son) is now 7 weeks old! Crazy.

Lindsey and I played from 6:45 until about 7:30 when it started getting dark. Once home, I threw together a quick taco salad for dinner using leftovers from last night’s taco feast!

I put a massive pile of raw spinach on a plate and topped it with leftover ground beef, chopped tomatoes, green and red peppers, salsa, guacamole, and cheddar cheese.

I ended up throwing it in the microwave for a couple minutes and it tasted just like nachos! So good.

The chips on the side are simply corn tortillas that I put in the toaster oven (just on the regular bread toasting setting) — they came out perfect and crunchy, no frying necessary.

I’m off to school — busy day ahead, but I have a fun running date planned this evening, so I’m looking forward to that!

    I love making pita chips the same way! Those running skirts are so cute... Do they ride up or stay put??

      Stays put perfectly for me! Riding up = major no go. I can't stand shorts/skirts that do that if I'm working out!

    I love baking corn tortillas to control the salt and fat - you can add other seasonings, too!

    I need to try tennis again...the last couple of times I played were shortly after lifting in the gym, so needless to say my energy levels weren't quite where they needed to be! ;)

    Something about a tennis/running skirt seems so intricate to me. I can't explain it! Maybe something about range of motion?

      It works for me! Playing tennis in a skirt felt way more natural to me than shorts because in high school our tennis uniforms were skirts!
