Food, Glorious Food!

So… I hope none of ya’ll were planning on going to the grocery store today. Because, well… I might have bought everything.

Good thing I have like 500 reusable bags!

I’m not even kidding when I say I literally had ZERO food in the fridge.

Nom, nom, nom!!!

Thankfully I had some frozen Ezekiel bread in my freezer so I had something to eat for breakfast this morning:

Mmmm I love toast. Especially when slathered with nut butter and jam (this was strawberry rhubarb). Luckily I also had a some cherries left over from the amazing orchard my cousin and I went to a few days ago.

After some elliptical-ing and strength training at the gym and dominating the grocery store, I used my newfound bounty of fresh produce to make a delicious lunch.

I started with a ginormous mixed green and spinach salad topped with canned beets (oh how I’ve missed you!!), sliced cucumber, string beans (microwaved, I’m lazy), and feta cheese (because FETA makes it BETTA!!). Topped with balsamic vinaigrette:

My second course was a sort of deconstructed burrito (minus the tortilla) made with a serving of quinoa (again, microwaved), canned black beans, sliced green pepper, salsa, and cilantro (obsessed).

Dessert was a clementine 🙂

Now I’m tackling this monstrosity:

Yep… that’s my laundry, which has taken over my closet to the point I can’t even walk in there anymore. Gotta love coming home from long trips 😉

    love the fridge before and after...i LOVE leaving with nothing in the fridge and then coming back and filling it up! good luck with the laundry monster, it's always a beast :)

    Hey Anne, how much do you typical spend when going to the grocery store? I try to go every Monday...plan my weekly meals out and get lots of healthy snacks, however healthy foods are a bit more expensive and sometimes I end up spending more than anticipated. My boyfriend thinks I spend "way too much on food"...but having "good for me" stuff is important...Just curious to see if I'm spending the normal amount...or maybe need to search around and budget more! Thanks! Welcome back to the East Coast!
    Hi Katie! This trip ran me about $115 and should last me about two weeks (I hope!). I also bought a bunch of pantry staples while I was at it though. Ways I save are by buying out of season fruit frozen instead of fresh (aka berries), not buying meat (canned beans, canned tuna, etc. are my staples), and avoiding most packaged products. I love cereal but try to have oatmeal a lot as well since cereal is so expensive. I like trying to buy organic when I can, but obviously it's a lot more expensive so that doesn't always happen. How much do you usually spend? I could probably cut back... but like you said, it's important for me to have fresh, whole foods! -Anne

    HAHAHAHA! I was like that two weeks ago, messy closet and an empty fridge. They are both easy fixes. Good Luck!!!

    I don't think I've ever seen an empty fridge before! That is kinda scary. But I'm glad for you it isn't empty anymore!
