Holy Crepe!!!

OMG!!! I got some super exciting news today… but first: delicious dinner and wine with a friend at my place to celebrate!

Mmmm… for dinner I took some fresh asparagus, frozen broccoli, and frozen shrimp and sautéed them in olive oil and garlic, then added a little chicken broth and some goat cheese (the key ingredient!) at the end (just warmed it through so the cheese melted) and served it over 90 second brown rice with salt and pepper to taste. DELICIOUS!!!!!!!!!!!

YUM. Dessert was these awesome chocolate crepe cookies I’ve been enjoying since my neighbor gave them to me at Christmas:

They are awesome because they are super light and crunchy and the perfect bit of sweetness at the end of a good meal 🙂

So… what’s my good news???

If you follow me on twitter, you already know this, but…

I got in to UNC’s MPH — Nutrition program for the fall!!!!!!

I am super excited because not only do they have something like a 40% acceptance rate, but they are the #2 MPH program in the country! YAY! I’m still going to wait to hear from the other schools I applied to, so I’m not totally set to go there yet, but I’m just SO relieved to have gotten in somewhere (and somewhere really good, at that!) and not have to worry not getting in anywhere anymore! UNC’s program is cool, too, because it’s “coordinated” so it includes both the dietetic coursework AND internship required to sit for the R.D. exam. A lot of programs are just the coursework and make you apply separately to the internships, which is a huge hassle. Plus it’s neat that it’s an MPH program instead of just an M.S. (you take some extra public health courses as a result). Anyway… YAY! We’ll see what happens with the other schools I applied to, but I feel like it might be hard to turn down UNC… we’ll see! 🙂

    Congratulations! I had a question about the application process, since I will be applying soon, did you do any volunteer work or job shadowing before applying to the programs?
    Thanks! :) No, I didn't do any nutrition specific job shadowing or volunteering before applying (with the exception of working on my old company's community service committee - I organized 2 bake sales to raise money for Share Our Strength, which combats child hunger). I'm sure that would look great on an application, though! Good luck! -Anne

    Congratulations, that is so exciting!! I graduated from UNC with a Psychology degree a little over a year ago and am seriously considering applying to the School of Public Health as well. I have a friend that graduated with me but got her degree in dietetics/nutrition and loved the program. She works at CMC here in Charlotte. OK this is now a long rambling comment - sorry about that.     So happy for you...Chapel Hill is awesome. You can eat at all my fave restaurants! :D I have two friends who graduated from the MPH program (not dieticians, but I'm sure there are course overlaps) if you have any questions. I hope you end up going there!

    Hard to turn down UNC? I'd say so. But then I am a Heel through and through. Home state and all. Plus my gpa was alumni, so anyway, it's in our blood. We have to be Heel fans.

    I got my undergraduate degree in dietetics and I did a coordinated program. They are definitely the way to go. Saves you so much trouble! Good luck!
