Homemade Black Bean Burgers

Standing in front of my fridge awhile ago, I spied some black beans waited to be used up, so I decided to make homemade black bean burgers for lunch!

Doesn’t it look a lot like a real burger?? Weird.

Anyway, these were super quick, easy, and tasty! 🙂

Homemade Black Bean Spinach Burgers

(makes two patties)

Ingredients:

  • 1 C black beans (rinsed and drained)
  • 1 C fresh spinach
  • 2 Tbsp. whole wheat pastry (or regular) flour
  • 1 small garlic clove
  • 1/2 tsp. olive oil
  • 1/4 tsp. cumin
  • 1/4 tsp. chili powder
  • Juice from half a lemon

Instructions:

Toss it all into a food processor and whirl away! (Or you can do this by hand for a chunkier texture — just chop the spinach separately.)

Once it’s mixed, form into two patties. Toss them onto a skillet coated with cooking oil and cook on medium low for about 10 minutes, flipping every once in awhile, until they are evenly warm and have a bit of a crust on them.

Back to studying — we have a quiz in Anatomy & Physiology this afternoon… arg. This class covers SO much information so quickly, and the teacher is horrible. Bad combination!

    wow, these look like the real thing! definitely a must try...maybe i'll use canellini beans for an italian take? love how easy it is!

    These look great! I have a dumb question -- would a blender work if I don't have a food processor? I know, I know, I need to get a food processor ;)
    I don't see why not! It just might leave it a bit chunkier, which is totally fine! Give it a try and let me know how it works :) -Anne

    Anne, have you tried freezing and reheating these? I'd love to make my own to save money on buying my beloved BBQ Sunshine Burgers.
    I haven't tried that, but I bet it would work just fine! I'd say just wrap them separately in foil and then put them in a ziplock bag to keep out air. :) -Anne
