The Leftover Special – Packed Lunch Style!

You guys know I love creatively re-vamping leftovers. Case in point? Yesterday’s packed lunch.

I had a fridge full of random leftovers, but nothing concrete enough to just be eaten alone. Clearly, it was time to get creative!

First — I layered some baby spinach in a large tupperware. Veggie? Check!

Next, I threw in these cumin-scented baked sweet potatoes leftover from my healthy chicken fingers extravaganza. Carb? Check! More veggie nutrient power? Check!

Next up? Leftover black beans from a random dinner earlier this week. I LOVE black beans and sweet potatoes together 🙂 Protein? Check! Fiber? Check!

Next, some mushrooms leftover from our homemade whole wheat pizza party last weekend! Randomness? Check!

Then came some leftover roasted asparagus, also from my healthy chicken fingers extravaganza! More veggies? Check!

I decided to top it all off with a light vinaigrette — just a drizzle of olive oil, a few hefty squirts of lemon juice (no fresh ones on hand!), a lot of cracked pepper and just a little cracked sea salt.

This was one of those… “sounds weird, but is delicious” type creations. I love complete meals in one bowl!

For something sweet and refreshing to end the meal, I tossed in a couple clementines (actually, they are minniolas… baby tangerines?):

Plus a siggi’s yogurt! Loving this brand lately — so thick and creamy and flavorful! Just wish they were organic.

As for an afternoon snack, I threw together some trail mix aaaaaaaaand… one of Matt’s awesome Oatmeal Dark Chocolate Chunk Cookies. 🙂

Delicious day of eats 🙂

I’m off to school — it’s rainy and cold here today, perfect for snuggling up on the couch with a movie and lots of blankets. Or… for yoga! I might hit up a class later today to get some stretching in before tomorrow’s long run. I really like yoga when it’s raining out… probably because I don’t feel sad that I’m indoors missing out on pretty weather 🙂

    I feel the same way about hot yoga on cool rainy days. I'm heading there myself after work. It's drizzly and gray down here in Charlotte.

    I love using leftovers for randomly inspired lunches! Indoor workouts are just a little bit better on rainy days - they actually make me want to stay in the gym longer because I don't want to head back outdoors! :)

    Your lunch concoction looks fannetastic. Snuggling up on the sofa is one of my favorite things to do also, but rarely get a chance to do so. Enjoy. The weather forecast in Atlanta for last night and today was one of gloom and doom. The weather people missed it again. Sprinkled last night and this morning and sunshine right now.

    Your lunch looks yummy. Wish I had it in my fridge for lunch today. Wanna send it to Topeka? We got 5.5" of snow yesterday and today everything is covered with ice so I'm staying in when I don't have to be out (like for work). Have a good run tomorrow.

    This is definitely my weakness. I stink at repurposing leftovers. I would definitely waste less food if I were better at this.

    Ahh I love one-bowl meals! Especially when it is mostly veggies:) Slash clementines are my favee, I much prefer grapefruit though- they should start growing baby grapefruits!:)
