Homemade Chicken Fingers FTW

Hello, my friends! I hope you’re all having a lovely Thursday! It’s been a busy one over here – no snow day today so I was up bright and early to teach my 8 a.m. nutrition course over at GW. Now, I’m getting caught up on some AnneTheRD client work before a couple more client meetings this afternoon, and also doing some blog prep because the Winter Shape Up that I’m co-hosting with Gina starts on Monday!

Since my content for the Winter Shape Up is meal plans and they start on Monday, I’ll actually be posting my first week’s content for the challenge tomorrow, so you’ll have the weekend to go grocery shopping and get ready! So stay tuned for all the information and the official launch of the Winter Shape Up tomorrow. Between the nutrition content from me and the workout videos from Gina, we’ve worked hard on this and we hope you guys find it fun and inspiring!

And now, speaking of food, today I’d like to share some love for homemade chicken fingers. Anyone else a big fan?!

Matt whipped these up for us last night (and I made some baked sweet potato fries to go with the) and they came out delicious. He used a mix of bread crumbs, ground flaxseed, and some seasonings for the crust, and soaked the chicken in a milk/dijon mustard mixture (we were out of eggs) to make it all stick. So good! I just enjoyed some leftovers for lunch.

The more ketchup {organic – no HFCS!} the better, obviously.

Keeping it short and sweet today – hope you’re all staying warm! I’m kind of over winter, I’ve decided, mostly because I miss being able to take walking breaks from work without freezing my face off… anyone else? Zara says she’s totally over it, too.

    I love crusted tofu. Cornmeal makes for a great gluten free crust as well!

    I want to do the Winter Shape up too! I am SO over winter! I hate having to go outside to warmup my car before I leave for work. Have you tried the Tessamae's ketchup from Whole Foods? It's really good! And I am not a big ketchup lover!

    I love the idea of using flaxseed in the crust. I usually just do breadcrumbs, but I'm going to have to switch things up next time.

    Saw your blog on Greatist! Baked sweet potato fries - one of my favorite sides. How easy it would be to make the chicken fingers along with the fries for a nutritious meal!
