Honeymoon Bound!

Hello friends!

Guess what? Matt and leave for our HONEYMOON in Costa Rica this morning! As you may recall, we went on a mini-honeymoon immediately after the wedding in October and postponed the real trip until now so I’d be done with grad school and my dietetic internships. I’m sure it will be worth the wait! 🙂

I’ve spent this week getting ready to leave, seeing friends, and writing a bunch of blog posts so that the blog won’t be completely silent when I’m gone. See the end of this post for what to look forward to on the blog in the next two weeks!

On Monday, I met up with my high school friend Hilary for a lunch date at Panera Bread.

The lovely peeps at Panera sent me a gift card as part of the DailyBuzz Tastemaker program to give their soups a try. I was happy to oblige! I <3 Panera. I got a big fall salad and then had their Garden Vegetable with Pesto soup on the side, plus some whole grain bread. Everything was awesome but I really loved the soup – I’ll definitely get it again next time!

Hilary and I hadn’t seen each other in awhile since we’ve both been busy so it was great to catch up. 🙂

Another fun friend date I had this week was cooking dinner with Gena on Wednesday night!

I love that we always have cooking dates at each other’s places when we meet up. So fun! Since she cooked for me last time, this week it was my turn!

I made us my Celebrations Quinoa Salad with Pecans & Cranberries (so good!), and we made a big side salad, too. Gena provided the greens and carrots!

I’m happy to say the quinoa salad was a big hit.

As always, Gena and I had a great time catching up and chattering away through the cooking process, eating, and well after, too. We always have such a good time together. 🙂 I sent her home with some veggies we weren’t going to use up, a little container of leftovers, some vegan almond biscotti (recipe coming later!), and a few of my 5 Minutes No Bake PB Granola Bars, too! I made a huge batch earlier this week so that Matt and I could take some with us on the honeymoon. 🙂

Lastly, I had a fun running date with my college friend Kathleen yesterday morning on the mall!

It was a gorgeous morning for a run.

We covered about 4 miles and were having such a good time chatting that we continued the conversation in a nearby Starbucks after we were done. 🙂 Thanks for the great morning, Kathleen!
