I am alive!

Friends! I am alive and well, but very sick of procrastinating studying. It’s been a busy week/weekend — holiday parties are in full swing and I haven’t had time to do any fun cooking or blogging! I also have my bio final exam tomorrow morning… soo much information to remember, and I really need to buckle down today, especially since I accidentally slept til like 10:30 because I was out late last night. Oops! 🙂 So much for my favorite Sunday morning yoga class!

I did take a break from studying today though to whip up a batch of my favorite Veggie-tastic Minestrone Soup. 🙂

Homemade soup is the best… not only is it tasty, but it’s also healthy and quick and easy to make. Plus, having leftovers to enjoy this week when I’m strapped for time will be key!

It’s also a great way to use up your fridge. I switched up the veggies this time based on what I had and needed to use up before leaving for Christmas — carrots, celery, and frozen peas just for fun 🙂 I also used fusilli (spiral) pasta as you can see — my favorite shape 🙂 I just enjoy the texture and feel of eating it. What’s your favorite pasta shape?
