The Super Food Special

Mmmm… today’s lunch was one of those awesome meals that you finish feeling fully satisfied, both physically and mentally. I’ve been doing a ton of eating out the past week and I was really craving something super nutritious for lunch.

Yum!! I had an old favorite, my Kale, Chickpea & Feta Greek Salad (click for the recipe)! LOVE this. And love having a blog so I remember fun recipes like this!

I didn’t have any lemons on hand, so I just topped it with balsamic vinaigrette instead of the lemon juice/olive oil. Still just as amazing 🙂

With my salad, I enjoyed another nutritious favorite — my Mexican-Style Baked Sweet Potato Fries!

Time to get back to studying — we have a lab exam in Anatomy & Physiology today. We’re learning all about how the heart pumps blood. Interesting, but complicated!

What’s your go-to meal when you want something super healthy but delicious? I’m always a fan of veggie-filled salads, beans, and baked sweet potatoes 🙂

    i always love roasting veggies with a tiny bit of olive oil...i could eat that stuff all.day.long. i love the recipe for the fries!

    I'm the same way. Either a really big salad with everything in it, or a big bowl of hearty soup w/ tons of veggies. That salad looks really good, and I've been looking for some new salad recipes!

    Looks SO good. I wish I had kale, I'd so much kale chips. I do have crumbly cheese though, I'm about go stand in the kitchen and throw something together. :) P.S. I miss hotel Anne P. and the giant kitchen window! Natural light!! ;) Can I come back now? I really do miss you tons, it's sort of ridiculous. EFF's. Epic friends forever.

    Sweet potato fries are a staple in our house! We have them almost every night! That salad looks great, but I am afraid of eating kale. Unless it is in chip form.
    Hehe don't be scared of kale! It's tasty :) I just pull the leaf part off the stems - the stems are the bitter part! -Anne

    Roasted veggies or tons of vegetables sauteed and made into an omelet.. mmm, maybe I will have that for lunch. I bought kale and cucumber yesterday though, maybe I should give this salad a try :)

    My favorite salad has spinach, hemp oil, raw probiotic cheese, chickpeas, and dried mulberries. Wash that down with some kombucha and you're good to go

    Actually that salad looks like my favorite healthy salad...with the exception of the kale which i've never tried....going to have to now. Another go-to for me for a super healthy meal is something like baked salmon, sauteed spinach or steamed brocolli, and a little wild rice or couscous.

    That last pic really caught my eye! Love the skill of taking that shot while squirting the ketchup! And the meal looks awesome!
    Hehe I was impressed with myself for that shot, because the ketchup is almost empty and really hard to squeeze! Strength training + ketchup squirting all in one ;) -Anne

    I'm right there with Nicole and Liz. I big salad or a big bowl of steamed or roasted veggies on spinach is my idea of comfort health!

    Mmm, sweet potatoes is definitely one of my faves. It feels like indulgent eating, but it's actually quite healthy. WHen I want to do some 'recovery' nutritious eating, I usually cut back on meat in favor of eggs, beans, etc.

    I've been making "salads" with sauteed collard greens and purple cabbage, topped with kidney beans. So good!

    Anne these photos are fantastic! I am so jealous of your mad skillz! (Especially that ketchup shot - daang). I'd have to say as ordinary as it is, a Green Monster never lets me down both as being tasty and of course, healthy!
