Lemon Avocado Hummus Recipe

Ingredients

  • 1.5 cup (one can) cannellini beans, rinsed and drained
  • 1 cup fresh baby spinach
  • 1 Tablespoon olive oil
  • Half a large ripe avocado
  • Juice from 1 lemon
  • 2 cloves garlic
  • Salt & pepper to taste

Instructions

  1. Toss all ingredients in a food processor and process until smooth.
  2. Serve chilled with crackers and veggies, or use as a sandwich spread!
