Monday’s Packed Lunch & Crossfit Squat Success!

Good morning, friends!

I haven’t shared pictures of any of my packed lunches lately, so I thought today would be a good day to bring it back. 🙂

My lunches continue to be quick and easy and made in the morning right before I rush out the door. Maybe someday I’ll get my act together and make lunches the night before… maybe not. 😉

On Monday, I threw together a salad from some weekend leftovers, plus a baggie of unpictured balsamic vinaigrette.

To go with the salad, a hummus wrap! I haven’t made a wrap in ages.

I keep the tortillas in the freezer so they stay fresh longer, and usually pop them in the microwave on a paper towel for 20 seconds before making my wraps. Well, I set the microwave to 2 minutes by accident but figured I would just stop it after 20 seconds. Um, yeah. Clearly I got distracted, 2 minutes went by… and my wrap was toasty. I improved and made a hummus quesadilla of sorts. 🙂

For afternoon snacks, I packed some almond butter + an apple (Gretchen, this reminds me of one of your photos!):

And I also ended up having an unpictured Chobani Greek yogurt because that wasn’t enough to tide me over before Crossfit!

I headed to Crossfit Dupont right after work on Monday. Another fun workout! Matt didn’t join this time because he was in need of a rest day — he had the big Tough Mudder on Saturday (it went well!) and then a soccer game on Sunday! I was thinking of sharing some photos/thoughts from his Tough Mudder experience, if you guys are interested? He and his buddies got some great action shots along the way using my waterproof camera. 🙂

Anyway! Here was Monday night’s workout:

The girls and guys were split up again and the girls (there were only 4 of us this time) did the DWOD first. The pull up holds were SO hard! I only made it to like 15 seconds… maybe 20?

Overhead walking lunges — I used a 15 pound plate:

Sledgehammer strikes! I love these — you feel so hardcore and it’s great stress relief to slam down the hammer as hard as you can. 😉

Plus burpees! I made this little action image thingy using Gickr.com — there’s not a photo of me fully jumping at the top or fully in the pushup/plank, but you get the idea. 🙂

When we were done with 3 rounds, we swapped with the guys and headed over to the other side of the gym to start the strength workout!

I’m still having mobility issues (my shoulders/upper back are REALLY tight) but guess what? I was able to do a legit squat holding the bar on my back on Monday night for the first time ever!!! I was so excited — I think my shoulders were stretched out already from the earlier workout. I stuck with the 30 pound bar because my shoulders are still too stiff for me to add extra weight, but I was pretty pumped. Here’s hoping I can eventually work up to doing more! Must do more mobility/stretch moves at home…

    I'm interested in hearing more about Matt's tough mudder (guest post?!). I was wondering if he was able to do it. I heard there were a lot of issues with traffic/parking/storms on Saturday and then it was canceled for Sunday. Glad he was able to go and had fun!

        Hello, I have been following your blog for a couple of years now and I love reading, it's so fun! I too am excited to hear about the tough mud run! My uncle just did a different style of mud run in Detroit a couple of weekends back and he had a great time, he got COVERED in muck, looked like a blast. Thanks for all the food advice and if you ever need advice on milk or dairy products or industry issues hit me up. I hold a BS in Dairy Science (Class of '11) from Cal Poly San Luis Obispo (the same school Weird Al was awarded his ARC degree from.) Regards, Matt

    I have the same mobility issues! I canNOT get my elbows up haha. By the way, i ended up not doing a full membership at the box I was going to in Ballston bc of the price.. Hoping there's a Living Social deal soon!

    congrats on the squat success!! that's so exciting! :) also, that happens to me when i'm microwaving things all the time - i'm too lazy to reset the timer so i just let it go and then forget to pull out whatever i'm cooking! it's the worst with oatmeal because then there's literally an explosion in my microwave.

    Whenever I have lunch on the go, I always pack a wrap. So portable and lots of leverage to fill them up with so many delicious things. Glad to see CrossFit is still going well for you! :)

    You are the packed lunch queen! Is maple almond your favourite of Justins? Well done for sticking with the cross training, places are a few and far between here in Ireland but I really want to try it!

    I have been on a Quinoa salad kick all summer. I make a big batch on Sundays and make that my 1pm meal throughout the week. This week I mixed it with black beans, chickpeas, tomatoes, olive oil, and vinegar. I can't get enough!

    Not telling you what to do, but couldn't help but notice the brand of almond butter you were using. Almost bought some of the same over the weekend as store was having a sale on it. Then, I noticed that it contained palm oil. WTF. Nuts in and of themselves have so much oil in them. Why pay for extra oil that's not almond? Plus, is palm oil good for you? I don't know. The brands may cost a bit more (and almond butter is definitely one of the more expensive nut butters), but I always try and buy the nut and the nut alone. (You also have the Vitamix now (yes, I read the blog), but it would probably be a pain in the butt to clean.)

      @ LC, Palm oil is often used as an emulsifier/stabilizer to allow foods to preform how they would other wise not, the palm oil is probably in there to allow the product a smoother spreadability or to keep some of the ingredients in matrix. As long as you limit your consumption of these oils you will be just fine, in fact getting the proper amount of fats/oils in your diet is key to healthy digestion. As you imply, Annie is the expert in this area, but I just thought i would try and help. Matt

      I mix it up between brands - sometimes I buy plain almond butter (just almonds), but I also love the taste of the Justins with the maple syrup so I'm not bothered by the palm oil. Everything in moderation!

    I would love to hear more about the tough mudder! It's just me, I'm sure, but I lose interest once bloggers start becoming CrossFit obsessed.

      You're in luck then because I'm not obsessed :) I like mixing up my workouts too much to only do Crossfit! We've been doing it once per week, maybe twice. Perfect!

    My lunch was also a veggie inspired lunch consisting of a salad topped with a traditional Arabic dish called foul elmaleh, it wasn't much to look at but sometimes the yummiest meals aren't. For snacks i had grapes, and carrots/snow peas and hummus. It was super food! :) Keep up the great squats dear! You are awesome! Sima
