My First Packed Breakfast!

Public service announcement of the day: canned chunk light tuna is really delicious when mixed with hummus.

Since I know you guys were wondering and all. 🙂

For lunch today, I whipped up tuna sandwiches for myself and Matt — just chunk light tuna mixed with hummus and some dijon mustard — it’s delicious, I promise. Topped with sprouts and some mixed greens.

In other news, I did something out of the ordinary this morning — I packed breakfast! Usually, I eat breakfast at home before I leave for the day — most of the time while writing/publishing my blog post. 🙂

I had an appointment early this morning with Campus Health to have blood drawn, so I wasn’t supposed to eat beforehand. Don’t worry, nothing’s wrong — I’ve just never had labs run before and I thought it would be interesting to see all my levels since I actually understand what everything means now given all the biochem and medical nutrition therapy classes I’ve had! We can get a metabolic panel test done for free with our student insurance, so I figured why not. 🙂

Anyway — I packed breakfast to eat right after the appointment. Hungry Anne = not a good time.

I threw some Greek yogurt (I would have used plain, but we are all out) and a bunch of berries in a tupperware, topped with some hemp seeds for a little extra staying power. Hemp seeds are a great source of essential fatty acids — and protein!

I also packed some cereal in a baggie — this way it wouldn’t get soggy before I was ready to eat.

Plus my usual portable tea mug with a tea bag ready to go! Just add water. This comes with me to school every day.

After my appointment this morning, I had a three hour group meeting with some classmates to bang out an assignment/presentation we have due Monday. It was efficient AND we had fun joking around while working on it — win.

Now I’m getting a few more things done for school and getting ready to enjoy Friday night! Thanks for all your advice on my “To PR or not to PR?” post yesterday — I’ve decided that I’m going to start out the race with the aim of getting a new PR, and if I’m feeling good (but still enjoying myself), then I’ll continue to go for it. If the hills are too much or I’m totally not feeling it, I’ll dial it back and just enjoy the scenery. Either way, the main goal is just to have fun. A PR would just be icing on the cake. 🙂

I went and picked up my bib and shirt (love the Carolina blue!) this afternoon, so I’m ready to rock. See you in the morning, Tarheel 10 Miler!

    I always pack my breakfast, and although it's a pain to do the night before, I love being able to get to work and relax while I eat rather then rush through it at home! :) Happy weekend!

    Good luck with the 10 miler! How would you compare hemp seeds to chia seeds? I'm just wondering if one would be better than the other or are they about the same.

      I feel like chia seeds/hemp seeds/ground flax are all similar - kind of like blueberries vs. strawberries. They all have good nutrients - just slightly different! So I say mix it up - enjoy all of them!

    I always take breakfast with me to work, but that's because I get there at 6:45 every morning! I'd much rather enjoy it at home, but I'm in too much of a rush to get the heck out of the door in the AM! Good luck tomorrow!

    So fun to see what other people pack for breakfast! I always pack mine and lately I've been enjoying banana oatmeal, the idea for which came from this lovely little site!

    Anne - I tried the tuna/hummus/dejon mixture last night and you're right - it was amazing! Never using mayo again. I thought I was the only weird one who always put dejon mustard in with the tuna? Also, good luck in your 10 miler!

    My favorite combo is tuna with dijion mustard and Trader Joe's white bean and basil hummus. amazing.

    wow! I've never tried hummus mixed with tuna before, but I have always wondered how it would taste. You're so brave, Fanne. How much hummus and mustard did you use? Do you think the packets of tuna would work the same as the cans??

      Sure, canned tuna/packet tuna - same thing! I didn't measure, but I used about 2 parts hummus for 1 part mustard? Just experiment with it :)
