Happy Wednesday! It’s a cold and very windy one over here – so lame after the gorgeous warm weather we were teased with earlier this week! I even busted out a sun dress yesterday and a skirt Monday – and now today it’s back to scarves and hats and they are predicting snow for Friday. What the heck, weather? Oh well – I guess it’s a good excuse to make more soup, right? 🙂 I’m glad many of you liked the look of my Thai Coconut Chicken Soup recipe from yesterday!

Since I knew it would be getting cold again today, I took full advantage of the weather on Monday and Tuesday. On Monday, I treated myself to a Chop’t grain salad bowl and ate it outside – the sun felt amazing.

And yesterday, I enjoyed an afternoon walking break with my friend and fellow dietitian Sarah! She works for herself full time, too, so we meet up every couple months to talk business – it’s like a mini-mastermind group. Love it!

Before our walk, Sarah and I were both attending a lunch event for local dietitians hosted by Siggi’s. It was at a cool spot called Culinaerie that hosts cooking classes, so we got involved in making our lunch! Salmon was on the menu – my fave.

Look how beautifully they plated this salmon! Those are edible flowers – and the raspberries and lemon chive infused yogurt went really well with it, too – I love yogurt with salmon. I want to make that yogurt sauce again but with dill instead of chives! It was just whole milk yogurt, minced garlic, lemon zest, lemon juice, and chopped chives. Yum!

As for fitness this week, on Monday I enjoyed a nice low key lunchtime yoga class, and yesterday I was back at it at the track! It was a lovely morning for running. 🙂

My legs were feeling a bit tired from all the running and walking in NYC over the weekend, and my usual running buddy wasn’t there to keep me quite as speedy, but I still had a good workout. We did two 2400’s (6 laps) at around our half marathon pace (I was doing a little under 8 minute miles). Then I finished it out with a relatively speedy 800 before cooling down.

As for this morning, I made it back to Urban Athletic Club via ClassPass! I hadn’t been in awhile and it was fun to go again – Chelsea and I had forgotten how tough their boot camp classes are! This was an especially hard one – lots of cardio and upper body strength, too. Here we are reenacting the kettle bell swings after class. 😉

I came home after and had my latest obsession – runny yolk eggs + greens + sauerkraut (see also: why you should start eating sauerkraut). Surprisingly good combo, especially with a little salt and pepper and the runny egg yolk! I also had an unpictured piece of toast with peanut butter.

I will leave you with a photo of my favorite furry friend, since it’s been awhile since I shared one! Matt was out with a friend last night so Zara and I had a cozy girls’ night in. I ate leftovers, watched One Tree Hill (so good – I’m just about to start the final season) on Netflix, folded laundry, and relaxed. 🙂

    We made some delicious ground beef tacos with premade guacamole from Whole Foods! Yum!

    I am so not looking forward to the possibility of snow Friday, but the forecast next week is supposed to be in the 70's! That salmon looks delicious--we typically make salmon once or twice a week, and I'm always looking for new ways to cook it. Best workout I've had so far this week is my 45 minute tempo run today!

    It's 20 here today and we're supposed to get snow tomorrow. However, by Monday it's supposed to be in the 50's, woohoo!!! I am going to have to try that soup, it looks divine...Sweet Zara, glad she doesn't work too hard, lol!!
