My New Favorite Sandwich

Hellooooooooooooooooo!

First things first — you HAVE to watch this video. It pretty much made my life. So funny!

(Thanks to my girl Tina for posting it yesterday!)

And now — on to the food! I have a new 5 minute packable lunch for you all today 🙂 The star? This amazing turkey, sliced apple, gouda, avocado, and mustard sandwich:

Epic. I simply layered turkey, thinly sliced gouda cheese, avocado, and a couple thin slices of apple, and then topped it all off with some spicy dijon mustard.

I had the sandwich on a toasted Arnold sandwich thin — I love these because they are nice and small (only 100 calories)! I never want a whole huge sandwich because I would always rather have lots of fun side dishes 🙂 I get bored just eating one thing!

My first side dish was a simple mixed green, cherry tomato, and sliced yellow pepper salad:

With a little baggie of balsamic vinaigrette:

Afternoon snacks were an unpictured clementine from my office, some baby carrots, and a Kashi granola bar!

Yum! That was my lunch yesterday for work and I devoured it 🙂

I’m making something similar for lunch today — I’m thinking my Smoked Salmon & Dill Wrap but using another sandwich thin instead of a wrap! Plus similar side dishes since that’s pretty much what the options in the fridge are still. 🙂

p.s. Guess what? I discovered Paradice ice packs (that I use to ice my knees after running — check out this post for more details) are also great for keeping your lunch cold when you forget to bring home a real ice pack! Hehe.

    I love apples and pears with turkey. It's such a great combination and I bet that it's even better with the avocado. Great play of textures. And I am also all about toasting the bread. Brings so much more texure and flavor to the table.

    This website www.snacktaxi.com sells reuseable baggies (snack and sandwich size) in awesome designs. I highly recommend them. I use mine every day!
