Outdoorsy Weekend

Hi friends! Obviously the new site design isn’t live yet… stay tuned! Working through a few more bugs, but SO close! 

We had a great weekend, one of the big highlights of which was a family hike!

I’ve been wanting to check out Huntley Meadows Park in Alexandria for awhile now and yesterday was the perfect day for it. They have nice, flat wooded trails and also a really big section of boardwalks so you can check out the marsh wildlife!

Riese loved it – we will definitely be back.

We had a little picnic while we were out there, which was fun – it was going to be lunch but ended up being a mid-morning snack because timing was off due to daylight savings. 

We had some raw carrots and cucumber, broccoli, an unpictured orange + apple, and some chicken and rice leftover from the day before.

The chicken was a crockpot garlic honey chicken recipe via Fit Foodie Finds that we had for dinner the night before!

I had it prepped ahead by putting the raw ingredients in a ziplock and freezing it until we were ready to eat it, so I just defrosted it on Saturday morning and then put it into the slow cooker.

It was pretty good – really good flavor, but the chicken itself was a little dry despite all the sauce!

We had fun hosting people at our place this weekend – on Friday night, we had my parents over for dinner. We started with a little snack board (it was missing the cheese when I took this picture… imagine cheese in the silver bowl) + some drinks:

And then we had our standard taco salad + steak for dinner. Riese loooooves steak.

On Saturday night, we had a bunch of friends + their kids over for happy hour and snacks. Made outdid himself with the appetizer board!

After everyone left on Saturday was when we had the chicken + rice I mentioned earlier. 

As for last night’s dinner, it was so beautiful out that we decided last minute to walk over to the beer garden in Del Ray. Matt, Riese, and I shared the sliders + wedge fries + the fish tacos + salad.

The other big highlight from the weekend was a half marathon training run with my friend Kathleen!

We had 10 miles on the plan and got them in via a huge DC loop on Saturday morning. 

We discovered the reflecting pool between the Lincoln Memorial and the WWII Memorial is empty – whoa!!

They must be cleaning it for spring? 

We ran in it (with lots of tourists) – fun!

It was a pretty day for a run but sooooo windy – the whole run felt like a resistance workout! Oof. I was pretty wiped by the time we finished!

We only have one long run left – we are going for 12 miles next weekend. The weekend after we’ll do a step down (6 or 7 miles), and then the weekend after that is the race! Exciting!

We finished at Compass Coffee for our usual post-run latte + baked good refuel (tides me over nicely until I can get home and make a proper lunch)!

Once I got home I had a big wrap with leftover steak, tzatziki, feta, and greens. Plus some unpictured fruit salad!

And that’s that! It was a fun outdoorsy weekend. It’s even nicer today – supposed to be 70 degrees – makes it hard to focus on work!

    I've made that crockpot recipe- make it with boneless, skinless thighs instead of breasts...so much better! I actually make all crockpot chicken recipes with thighs...they don't dry out as much!

        Haha clearly I've been missing out! Chicken thighs are so tasty. I like them better in sheet pan recipes too! So juicy!
