Packed Lunches FTW

Morning everyone!

Brrr — it’s a little chilly out there this morning! We had some big storms roll through yesterday and it really seems to have cooled things down. I’ll be rocking the fleece today on my way to work! Speaking of work — I hope you all aren’t sick of reading about packed lunch ideas yet. 🙂

Earlier this week, I made a simple tuna wrap for myself for work. Tuna + chopped celery + plain Greek yogurt + Dijon mustard = yum. I made it the night before so I just had to throw it on the wrap in the morning and top with some salad greens.

Plus a side salad, leftover from our big weekend salads:

And some grapes!

For an afternoon snack, I packed a Chobani pineapple:

And a handful of homemade granola:

Ready to rock! Don’t forget the silverware and napkin. 🙂

I actually didn’t end up eating the salad with my lunch that day (just wasn’t feeling it), so I repurposed it in yesterday’s packed lunch as a big salad mess — I love these. If you don’t like normal salads, try one of these! Great way to get in veggies without feeling like you’re eating a salad. 🙂

I added some black beans, 90 second brown rice, and salsa to the original salad. So easy and really delicious!

I enjoyed it with some grapes, and for an afternoon snack I had a KIND coconut almond bar and some dried mango. I’m making a similar salad mess for lunch today because I still have the ingredients on hand to use up!

    I wish I could get my act together to pack my lunch more often - it only happens when I have leftovers from dinner the night before.

    WOW! All these foods are great to achieve a more fit and healthy body. It's amazing to see them in just one container. I was also not into diet before when I realized that I had these excess fats that I should eliminate. Then I started to get some tips online and also from friends about healthy diet. I am happy I did and now I am loving my body. Keep up you good work on your blog and inspire others always.

    The pepper on the salad looks so good! (random thought) This week I bought ingredients for turkey/swiss wraps to keep in the fridge at work, so quick and easy to just whip up during my lunch hour and I bring new add ins from home everyday to keep it interesting.

    I packed red grapes, a salad with mixed greens & arugula, grilled salmon, sliced grapes & garbanzo beans drizzled with EVOO, fresh black pepper, and lemon juice. For a snack I have a tangelo, cottage cheese & tomatoes.

    Being at home for lunch means a bit more options. Today I'm having salmon, brussels sprouts, black beans, and spinach cooked in coconut oil. It's pretty outstanding. :)

    I never get tired of your lunches, Anne. I am eating some homemade chicken noodle soup that I made yesterday. Soooo good for a chilly day in Fayetteville, Ga. I love Chobani fat free yogurt. I love putting fresh blueberries in it. Have a wonderful Wednesday. 10/13/12 getting closer.

    Hey I had a salad mess today too! Mixed greens with diced strawberries, avocado, spaghetti squash, olive oil and lemon juice. Love your lunch box ideas....keep posting them.

    as someone who packs lunch every day (and breakfast) I never get tired of seeing what other folks pack! today it was leftover pepperoni pizza, salad, a bag of mixed veggies, yogurt, a banana, and optimum pumpkin flax cereal. I will probably grab some cheese and crackers before dinner because I am hungry today :-)

    Love your packed lunches Anne! Today I had a tortilla wrap and inside consisted of black beans, Laughing Cow cheese, spinach, and lean turkey breast. Loving the wrap combos lately!
