Farmers Market Inspired Salads & Veggie Men

In other news, here is reason #1239012398 why I’m marrying Matt in less than a month — he does silly little things just because he knows they will make me smile. Case in point: this veggie man I discovered in the kitchen after he chopped us some veggies for a lunch salad on Sunday. 🙂

We got a lot of great produce and greens at the farmer’s market on Saturday and put them to good use in the salad, topping it with some Roasted Eggplant & Red Pepper Quinoa bean salad left over from my dinner with Gena.

Here’s my plate — the same as Matt’s but with the addition of beets! Matt’s not a fan. 😉

We dressed it simply with a drizzle of olive oil, balsamic vinegar, and lemon juice. Plus salt and pepper. Simple and tasty!

I love that we can finally take advantage of our porch now that the weather isn’t crazy hot. Getting some fresh air in our apartment has been awesome as well. Hooray for lower AC bills!

Yesterday I started my second of three fall mini-dietetic internships — I’m working at a corporate wellness company, and so far so good! I was excited to see that I have a yoga ball for a chair and there are boxes around to put computers on for standing desks, too. 🙂 Love it!

Yesterday, I wrote a blog post for their wellness portal about stress relief and made a handout for one of their upcoming presentations about avoiding unhealthy office pitfalls. They were a bit shocked at how quickly I finished everything — I guess I’ve just gotten used to doing everything at warp speed since I’ve been so busy! 😉

Off to day 2, then I have plans for another fun workout and dinner date tonight with my college BFF Turner. Have a great Tuesday, everyone!

    Veggie man is adorable, and it's so cute that Matt left it for you! A keeper! Your new desk set-up looks pretty awesome. Having worked in a corporate office in DC, do you know what would have made a huuge difference? Having a real healthy vending machine. We had one that was mostly natural and organic, but still mostly processed and high carb/sugar. It would have been so great to have a refrigerated one with fruits and veggies, hummus, etc. I bet a lot of companies would accept such a machine if it were readily available and marketed well-- new business plan? :)

    I love the little veggie man! How cute is that?? And the salads look pretty great too. Salads are one of my favorite ways to not only get in lots of veggies, but fiber too. Yum!

    That office set up, with the boxes and ball, looks fantastic! I love sitting on a bouncing ball instead of a regular chair. (I'm naturally pretty wiggly, so it's not about getting more movement in so much as making the movement comfortable, if that makes sense.) Good luck with your new internship!
