Parmesan and Spice Encrusted Chicken FTW!

Good morning!

Thanks for the excitement and tips related to signing up for my first triathlon! I’m pumped for this new adventure and excited for you all to follow along with my training 🙂 I’ll definitely be hitting up a tri store soon to try on some trisuits and trishorts, too. I’ll let you know what I end up with, of course!

Switching gears, I have to share this delicious dinner that Matt made for us on Sunday night:

Mmmmmm it was SO good! The star was the parmesan and spice encrusted chicken:

He took raw chicken tenders, rubbed a little olive oil, paprika, cumin, and red pepper into them, and then rolled them around in some grated parmesan cheese before pan searing them in a little more olive oil! Best idea ever.

It had such a yummy flavor!

He served the chicken atop a bed of sautéed spinach and pine nuts (simply sautéed with some olive oil, minced garlic, and a little rosemary) — also delicious!

Also featured was leftover red beans and rice from the other night:

Best dinner ever 🙂

We had a good amount of chicken left over since he made the whole package, so for lunch yesterday I threw together a tasty wrap with the chicken:

Yum! The wrap included chicken, fresh mushrooms and tomato, avocado, and baby spinach. No sauce required since the chicken was so flavor packed 🙂

On a related note, I’m incapable of making a wrap that isn’t stuffed so full it can’t close. This was SO messy to eat, ha. I would be a horrible Chipotle employee.

Aaaaanyway — I enjoyed a Stonyfield Oikos “super fruits” Greek yogurt on the side as well. This is their newest flavor! I wanted to try it so badly and I couldn’t find any near me so they were nice enough to send me some 🙂 It’s delicious! Matt’s a big fan, too. If you haven’t been able to get into Greek yogurt yet, this flavor would be a good one to try — it’s a little more liquid-y like a regular yogurt, but still tangy like Greek yogurt 🙂

I’m off to school! Busy day ahead with lots of group project meetings — grad school LOVES group projects, apparently. Have a good one!

    mmm you had me at parmesan encrusted ;) I still haven't tried any oikos flavors except for plain - I like the non sweetness of it :)

    Love the idea of adding pine nuts to sauteed spinach! And call me crazy but I don't want anything to do with a wrap if it's not difficult to hold together while eating. That's a fact.

    Had the super fruits flavor last week and loved it. I attempted to get more this weekend at Whole Foods, but accidentally picked up the strawberry flavor instead and didn't realize it until I was home (oops!). Today, I have lemon and I'm excited to try it!

    I don't usually eat flavored yogurts, but the Oikos Superfruit is too good to resist! I like to buy a few and have them for dessert.

    I do the same thing when I "attempt" to make wraps, and sandwiches! My roommate and boyfriend always make fun of me because I typically make them so big I can't even fit my mouth around them!

    That chicken looks delish! Love your chicken broth saving trick on Carrots N Cake today, that's how I found your blog. I waste broth too from time to time and it drives me crazy, now I can save it!

    Ive never tried Oikos before but I do enjoy the taste of Fage and Chobani :) That parmesan chicken looks delicious! :D

    They had that Oikos Superfruit Pomegranite flavor on sale at my grocery store because it was nearing it's expiration - it was only $1! I bought three and tried the first one. It's a bit tart but I really liked it, esp with granola!

    That chicken look sooo good Matt. You are a good man. Anne, I would love to try the different flavors of Greek yogurt, but they all have too many carbs which I have to watch. I stick to plain no fat. But I spruce it up with fresh fruit and a sprinkle of flax seed. The chicken wrap looks delish too.

    Dinner looks awesome! I think I need to make that chicken sometime soon! I even have chicken tenders I could use to make it! On the greek yogart note...I almost bought some at the store today, but couldn't get the coupon to print, so gonna have to try another time. I do like the Chobani greek yogart, the raspberry is GREAT! I bought 4 more today of different flavors to try. I am really loving the greek yogart, just don't like the price! lol
