Quick and Healthy Dinner Ideas

Hello my friends! As you know, Matt and I are on vacation in Italy right now, but I thought a post re-sharing a few of my favorite quick and easy dinner ideas would be helpful in the meantime. The next time you need something fast, check this post! First up is chicken – scroll down for seafood and vegan options. 🙂

Chicken Entrees:

No time to marinate? Try my Pan Seared Balsamic Vinaigrette Chicken. Exactly as it sounds – just cook the chicken in some store-bought balsamic vinaigrette (I recommend Newman’s Own brand). Juicy and flavorful! Serve atop salad or with some fun sides – my Mexican-Style Sweet Potato Fries and Lemon Garlic String Beans would go well with it!

Want an entire meal in one pan? Try my Saucy Tomato & Spinach Chicken – this would work well with firm tofu, too!

Another quick and easy chicken favorite is my Corn Flake Encrusted Chicken Fingers recipe! Pair it with the sides I noted above, or try my Garlic Herb Roasted Veggies (pssst: here’s How to Make Brussels Sprouts Delicious).

Fish/Seafood Entrees:

My absolute favorite salmon recipe, Pesto Baked Salmon with Veggies, also happens to be extremely easy. Perfect for summer, too! Serve atop quinoa or greens.

Next up is my absolute favorite tilapia recipe: Almond Encrusted Tilapia. Try it topped with Black Bean Olive Salsa — delicious! It pairs well with any veggie side dish noted above as well.

Love shrimp? Try my recipe-not-recipe (no specific measurements necessary!) for Goat Cheese Shrimp with Rice & Veggies.

Lastly, want a meal idea that will impress guests by how fancy it sounds but that is secretly really easy to prepare? Try my Seared Scallops with White Beans and Spinach. YUM.

Vegan Entrees:

This one is an old favorite and is an entire meal in one pan: BBQ Chickpeas with Sweet Potatoes & Bok Choy.

Looking to experiment with nutritional yeast? Here are two fun vegan recipes that use it: “Cheesy” Coconut Sautéed Chickpeas and Kale & “Cheesy” Mushroom Quinoa.

And if you’re REALLY tight on time, try the easiest recipe of all time: 4 Ingredient Quinoa Salad.

    These are amazing idea. Especially that goat cheese shrimp- I LOVE goat cheese. I actually had a girl's night with my guy friend's new gf and we spent an hour talking about goat cheese.... I decided he could keep her around. hahahaha. I'm absolutely bookmarking this page!
