Recent Eats

Hey guys! I’m heading to an all-day training today (and tomorrow, too) on motivational interviewing (the approach I use with my AnneTheRD nutrition clients; it’s always good to brush up and also get continuing education credits towards maintaining my RD credential), so this will be quick!

I got back on the savory breakfast train yesterday after a week of Banana Spelt Muffins and yogurt with fruit – yep, finally got sick of that combo, but it worked out well because the muffins are all gone anyway!

I had two fried eggs (I miss runny egg yolks, but still yummy!) with avocado and hot sauce, plus some blueberries and a waffle. Yum!

As for lunch yesterday, I had a fun meal out with a couple fellow local female solo-entrepreneurs (Lisa and Sarah) – fun to talk shop with them! We hit up True Food Kitchen in the Mosaic District, and started with the kale guac and watermelon heirloom tomato salad to share. The watermelon/tomato salad was soooooo good and fresh!

I also got a green juice – I think kale, apple, ginger, lemon, and something else? Maybe cucumber? Delicious!

I had my old fave Mediterranean quinoa salad with salmon for my entrée. Always a hit!

I will leave you guys with a photo from yoga on Wednesday of the growing bump! And yes, I’m wearing the same outfit I wore last time I took a picture in this yoga studio, don’t judge. 🙂

    Last night I made protein pancakes with spinach in them - best thing I've had all week!

    I made some chicken with peanut satay sauce that I ate with veggies and rice. It was absolutely delicious, and I think the leftovers were even better than the night I made it.

    I think watermelon heirloom tomato salad is my next pregnancy craving. That looks amazing! Kind of a random question, but did you get any warnings about eating salads at restaurants? My OB never mentioned it but some of my other pregnant friends (not in the DMV area) were told to be careful because they might not be properly washed. I see you eat salads out so I'm guessing we received the same guidance but I was just wondering!

    That breakfast looks delicious! And your growing bump is adorable! The best meal I had this week was a simple pesto and white bean pasta with salad that I made for a friend and I. It was the company and the long talks into the midnight hours that made it such a superb meal.

      Bought it! It's a savory tomato pizza waffle from the brand Swapples. They are paleo/gf... bought at Mom's Organic Market!
