Recent Eats + Weekend Reading

Hi friends – happy Friday! I’m getting ready to head to the airport in a few minutes for my Vermont half marathon adventures (see Wednesday’s Day in the Life post for more details!) but wanted to pop in quickly to say hi before I go. As always, see what I’m up to on Instagram, and I’ll be back Monday with a recap! :)

I started my Friday with an old fave – my Flour Free Breakfast Pancake. This breakfast is always a win.

I spent the morning tackling my inbox and to do list, and then broke for a training session with Paul from Capital Energy Training late morning. I didn’t get any pictures today but I’m still really enjoying our sessions and finding them really helpful in terms of fixing up my tight/sore hip situation! We’ve started working more into my crazy tight shoulders/neck now, too. Today’s session focused on loosening me up for Sunday’s half marathon!

Post-workout lunch was another standard classic: a big grain salad bowl.

In this one was arugula, avocado, chickpeas, brown rice, beets, and string beans. Plus salt, pepper, and my usual homemade balsamic vinaigrette. Yum! Grain salad bowls are the best.

As for last night, Matt and I threw together a Blue Apron meal – a really good Asian-y noodle dish with cabbage and cod. (Here’s the recipe.)

Because I’m all about adding more volume to meals with veggies, I threw some extra purple cabbage we had on hand into the mix, too. That also meant we had leftovers for Matt to eat this weekend – perfect!

Time to finish packing up and head out the door! Have a wonderful weekend, my friends!

    Love the idea of the cod with an Asian salad! Think I might just have to recreate it for dinner tomorrow! I’ll tag you on Instagram if I do :)

    So do you heat the ingredients in the grain bowl? Like the rice and beans, etc. Or eat it cold?

      No, I have it cold! Well, the rice is usually warm from the microwave (90 second brown rice) but everything else is cold!
