Restaurant Review: Butternut Squash in Chapel Hill

Hello friends!

I found a great new (to me) restaurant last night here in Chapel Hill — Butternut Squash!

A bunch of local readers had recommended it so I finally decided it was time to give it a try and met my high school friends Kristi, Amy, and Hilary for dinner there last night.

Before we get started with the deliciousness, I have a shameless friend plug — my girl Kristi (directly across from me at the table) has just left her full time job to pursue her Etsy eco-friendly flower business!

 

She has some absolutely stunning stuff, and I love that it’s all eco-friendly! Check out her shop if you’re in the market for flowers — they are perfect for weddings and other special occasions, and just for fun/home decoration, too 🙂

She said she had a lot of orders for Mother’s Day bouquets — I can see why! So pretty:

So proud of her for doing what she loves 🙂

Anyway! On to the food. Everything on the menu looked good — I’m definitely going to need to come back here!

Amy and Hilary both had the Thai green curry, which they said was delicious (and spicy!):

Kristi ordered the wholemeal salad — which was also apparently delicious!

And I had the amazing Black Bean Hemp-nut Burger — YUM!

It was SPICY and really good. Reminded me of my Mexican Black Bean Spinach Burgers!

It came topped with avocado, goat cheese, and mustard, and I had a massive towering side of sweet potato fries:

The fries were AMAZING — nice and thick (seemed like they were baked, not fried! very homemade), and topped with chunky cracked salt and pepper. I ended up eating half of everything and saving the rest for today’s lunch 🙂

I’ve had a great day so far today — I’m feeling a a lot better, which was good because I had big plans for a workout-tastic morning with my friend Lindsey!

We ran 3.44 miles around our hilly neighborhood (it’s SO nice and cool out today!) at 8 a.m., then came home and ate breakfast quickly before heading to hot yoga at 9:30! It was great — I took the past 2 days off exercise to help my body get rid of this cold, so it felt nice to get back after it 🙂 Running and yoga are such a nice combo, too, especially since we did a lot of power yoga style running stretch moves today, too.

Now it’s time to pack up and head off to DC! Matt will be out of town this weekend but doesn’t leave DC until tomorrow morning, so we’re going to meet up for dinner tonight when I arrive 🙂

    Any post that starts out butternut squash has got to be good. Must try that restaurant if I'm ever in the neighborhood.

    That meal looks fantastic. Whenever I'm out an a restaurant offers up a homemade veggie burger it's rare when I don't order them. So delicious.

    A good run, yoga, and a nice restaurant with friends. All in 24 hours. Doesn't get any better than that! Have fun in DC....
