Running into Spring + Avocado Toast Love

Hey friends – happy Wednesday! I’m LOVING March weather in DC this year – usually March is a rough month because you’re so over the cold but apparently this year spring is here early. 🙂

I’m also really loving that it’s so light in the evenings again – totally worth dealing with dark morning workouts! Light evenings make the days feel so much longer and more full. For example – last night I met my friend Karen around 6:30 for a nice stroll and low key outdoor dinner date, which totally wouldn’t have happened had it not been light and warm out!

We met in Rosslyn at the metro and then strolled over Key Bridge and into Georgetown, walking along the water for awhile before coming back and hitting up Sweetgreen for an al fresco feast.

It was such a fun night and a nice way to take advantage of the beautiful weather! For my salad, I got arugula, beets, cabbage (x 2 – obsessed), chickpeas, avocado, shrimp, lemon juice, and balsamic vinaigrette. Plus unpictured bread! So good.

And speaking of avocado – I’m still crushing hard on avocado toast as of late. I’ve taken to having my flour free breakfast pancake at home, then packing up a piece of avocado toast to enjoy downtown as my mid/late morning snack. This works especially well on days like today where I’m hitting a noon yoga class and won’t be eating lunch until around 1:15. Sometimes I eat all of it, sometimes I save a little for the afternoon – depends how hungry I am!

I kept it simple today and just topped it with some salt and pepper, but I found this awesome post from my friend Tina with “15 simple and delish ideas for avocado toast” that I want to experiment with next time! Yum.

I also threw together another batch of my Oatmeal Raisin Energy Bites earlier this week to enjoy as my afternoon snacks. I didn’t have time to make them into pretty small balls this time, so they are huge messy ones. Whatever – tastes the same. 😉 Love that recipe! I left out the flaxseed again (saving it for my morning pancakes!) and added a pinch of salt since my PB was unsalted.

On the fitness front, I’ve been all about the yoga this week – as I mentioned I’m hitting a noon yoga class today and I went to one on Monday, too. Feels so nice to stretch out and slow down, as always! As for yesterday, though, I was back at the track! It was chilly out there but felt good once we were moving.

We did mile repeats – oof! That just means run a mile fast, rest for a minute or two, then run another mile fast, and repeat. I know – rough. I wasn’t feeling my speediest but I pushed through! I did 3 mile repeats and also about one additional mile total of warm up and cool down jogging.

Time to get back at it – I have a lot of work to get done on the intuitive and mindful eating program I’m putting together with Rachael and Alex – we’re getting so excited to unveil it soon!

    Your salad and avo toast look awesome! I definitely agree with you about how nice it has been to have more light during the day. It makes it a lot easier to leave work late and still get out and do something.

      Exactly - I'm so much more motivated to do fun stuff outside vs. just coming home and sitting on the couch. :)

    Avo toast with some cottage cheese on top and salt & pep - my jam for sure! I had a Justin's maple almond butter and banana toast sandwich for breakfast yesterday, and that was delish too!

      I've never tried avo toast with cottage cheese - interesting! Will give it a shot! The almond butter/banana combo is always a winner though :)

    Avocado toast never gets old!!! Nothing better than slicing in to a perfectly ripe bright green avocado!

    I love avocado toast! Even my one-year-old eats it. Hot sauce is messy for me, so I use crushed red pepper flakes instead!

    I am all about avocado and I think it tastes good on absolutely everything and anything! Love me some healthy fats! Weirdly enough I've never had it on toast. My usual toast topping is peanut butter and blueberries. I love the contrast of textures!

    I used to have a problem to get good quality avocado. It was either overripe or too hard. Then I learnt a hack that solved this problem. I put hard avocado in a brown paper bag with banana or apple. All fruit release ethylene gas which makes them ripen. Bananas and apples emit more ethylene gas than other fruits. And the more ethylene gas they produce, the quicker everything in the surrounding ripen.The is used to trap the ethylene gas.

    I'm the founding member of Avo Toast Addicts Anonymous! I love it on rye with nutritional yeast & Maldon or celtic sea salt, pepper and smoked paprika. I also love it with sweet miso (like chickpea miso).

    Absolutely love avocado and toast! Sometimes I add an egg but most times it is perfect with a little salt and pepper and red pepper flakes. Perfect.
