Hello there!

Jess and I had another awesome day today, the highlight of which was a trip to the pool! I LOVE the pool 🙂

We started the day with a delicious brunch at Eventide in Arlington (Virginia) with our friend Heidi. I had an amazing spinach and mushroom frittata. NOM!

And one of these AMAZING biscuits with a strawberry rhubarb jam. Ahhh… these were seriously straight from heaven.

And then the three of us we went to see Sex & the City 2! To be honest… it was pretty lame. The story line felt forced and was pretty absurd/far fetched, and the characters were over the top (especially Samantha) caricatures of themselves. Boo! The series is so great, but the movies just haven’t lived up to it’s awesomeness! Oh well, it was still a fun girls outing 🙂

Jess and I headed to the pool after the movie. It was such a nice day here in D.C.! I feel like it’s not Memorial Day weekend without a pool or beach 🙂

I did have to bring some homework, though 🙁 We have a take home test for Microbiology due on Tuesday. Boo! (Although yay it’s take home vs. a regular test!)

The other girls were busy tonight, so Jess and I had a chill night in at my place 🙂 We made a delicious dinner for ourselves using some of my produce from Eastern Market yesterday!

Mmmmm… we had tomato, basil, and garlic chicken with sweet potato fries and steamed green beans. Delish!

084 082 The chicken was SUPER easy, juicy, and delicious — try this, you will love it!

To make it, we drizzled a little olive oil in a deep dish:

Tossed in a couple raw chicken breasts, and topped them with this awesome canned tomato mix:

And then tossed on some chopped fresh basil and cracked pepper:

Just pop it in the oven at 350 for 30 minutes. That’s it! You don’t need to cover it or anything. Yum!

Jess and I are off to bed! I’ve got 8 miles are on the docket for the morning. My training buddy Ashley is out of town, so I’m meeting up with Heather to run! Heather is actually going to run the half marathon with us next weekend now, too! Yay!

    I feel the same about the SATC movies! The show is the greatest thing since sliced bread, so why do the movies suck so much? It's like they forgot to put a real heart into them, like the tv series had. It's all over-the-top glitz and glamour...and I find that pretty silly. They need to get some better writers for the movies...maybe that would bring back some of the show's soul? Anyway, seem like you had a nice weekend! That biscuit looks awesome. I love quality biscuits with jam. :)

    Yeah, I thought the one liners were pretty funny, but the whole Abu Dhabi thing just didn't make sense to me. I wish both the movies spent more time in New York, it was like the 5th character in the series!

    I was planning on seeing SATC the other day but I changed plans and saw Prince of Persia. I guess I wasn't missing anything. It's a shame that the movie didn't live up to the show! I love that chicken recipe! Have a great run!

    I was just talking about going to the pool! I haven't been swimming in ages, and really want to go. I feel the same way about SATC! It was so over the top and camp. If you watch the movie compared to the 1st season, it's pretty much lost it's charm and relatability. p.s. that looks so yummy!
