Summery Eats

We enjoyed some summery eats this weekend!

First up: burgers.

That was a Blue Apron meal and it was delicious – the burgers were topped with pimento cheese and we had some unpictured roasted potatoes on the side, too (they weren’t ready when I took the picture/started eating).

I wasn’t sure how the pimento cheese situation would be because I’m 100% a ketchup girl, but it was actually crazy delicious. Highly recommend!

We added the grilled asparagus because we had some on hand to use up and I felt the meal could use some veggie volume too. 🙂

On Saturday, it felt like summer out, so we decided it called for some Blue Moon beers with orange slices in the yard for happy hour. Delicious!

Plus some take out sushi from The Sushi Bar in Del Ray. The multi-colored roe was weird (I don’t mind roe but why the crazy fake colors?), but otherwise everything was good!

Last night’s dinner was chicken enchiladas! 

The tortillas were stuffed with black beans, zucchini, peppers, and chicken that we sauteed in some Mexican seasoning. Topped with cheese and some enchilada sauce before going in the oven!

Plus lots of cholula chili garlic sauce – my absolute fave! The grocery stores/local food shops we have been ordering groceries from haven’t had cholula and we’ve been really missing it.

So I decided to buy some on their website, but instead of buying a tiny bottle and blazing through it in 1 week, I went big. Like, really big. This jug is literally the size of our cat Zara. It’s amazing.

Matt was like “wtf?!” when it arrived (especially because I bought 4 jugs because then they were on mega sale with free shipping… heh), but he quickly agreed it was basically my best idea ever. 😉

We enjoyed the enchiladas with some steamed broccoli on the side. Delicious! (Please note the Riese photobomb – she was trying to pet Zara while Zara was trying to run away…)

If you are interested, I have two enchilada recipes on the blog, both vegetarian but you could always add chicken, ground turkey, or ground beef – check them out! I love enchiladas because they are so easily customizable – you can add or subtract ingredients based what you have on hand. 

  • Walnut and Mushroom Vegetarian Enchiladas
  • Sweet Potato and Black Bean Veggie Enchiladas

And that’s all I have for you today because apparently I didn’t take any other photos this weekend! We took a lot of walks around the neighborhood, I had a virtual run phone date with friends, we ate leftovers and odds and ends from the fridge for lunches, and did our usual Saturday morning virtual boot camp workout class. We were supposed to be away on a fun trip this weekend, but obviously cancelled that awhile ago… bummer, but it was still a nice chill weekend at home. 

We have some good eats on the menu this week; we ordered groceries yesterday and got the ingredients to make our old fave Salmon with Lemon Mustard Dill Sauce (that sauce tho… I could eat it with a spoon) and Grilled Steak and Strawberry Salad (such a perfect summery dinner). The steak salad is happening tonight! Looking forward to Matt having the day off today so we can have some family fun… and so I can more easily get some work done. 

I hope those of you in the U.S. are enjoying the long Memorial Day weekend, and that you remember the reason for the holiday, too. <3

    Looks like a nice weekend! My menu This week - peanut coconut curry with shrimp (most excited for this!), Grilled venison steaks, fish tacos, turkey marsala and homemade pizza. My husband is an outdoorsman so the fish, venison and turkey are all caught from the wild!

    Looks like some great eats, although I have to say one bottle of that Cholula would be a lifetime supply for me, haha! And I do remember the reason for this holiday, every year: those who gave “the last full measure of devotion.” ❤️ ??

    Your story about your Cholula order made me laugh out loud! Probably because I can relate... but I’m a big fan of their chipotle version. Those tiny bottles go so quickly!

    Great to see the interesting variety there, though I share Matt's reaction to the tub of chili garlic sauce! But, food variety aside, it sure will be nice to see the current situation in our rear view mirror!
