Taco Night!

I’ve been feeling in a big rut lately food-wise, so on Saturday, Matt and I decided to mix things up. Enter: TACO NIGHT!!!

I hadn’t had tacos in FOREVER and they’re so fun to make. Plus, I always crave Mexican food when it starts getting warm out 🙂

We cooked lean ground turkey with homemade taco seasoning, heated up some whole wheat tortillas, and assembled all sorts of fun toppings — avocado, tomato, red pepper, chopped spinach, cheese, and of course hot sauce and salsa 🙂

Deeeelish! We also enjoyed Trader Joe’s version of Corona — with a lime wedge, of course!

Since we all know I heart leftovers, I turned the remaining ground turkey and toppings into a huge salad for lunch yesterday at school!

I filled a big tupperware 3/4 of the way with salad, then added in the leftover ground turkey, chopped tomato and red pepper, avocado, grated cheese, and some cracked pepper.

For a “dressing”, I packed a little container of salsa!  042

Is that not the cutest container ever? Kaoru, a blog reader and DC blogger that came to my fun LA Boxing fANNEtastic reader meet up last summer, sent it to me as part of a sweet care package a couple weeks ago! 🙂

In other news — did you glimpse the pretty pink flowers poking out from behind my salad? Apparently the tree outside our porch thinks it’s spring. I’ll take it! 🙂

I’m off to school and then coming home to study Biochem alllllllll day long. Biochem = my arch nemesis. Sigh. We have a test on Friday and I’m far from ready for it. 🙁

    I usually don't like Mexican food but I will admit that your taco looks tempting. Boy we had wind and tornado's come through Atlanta last night but today it looks like spring has sprung.

    Mmmm I love tacos! Especially making them into taco salads for the next day - that might be the best part because there's so many good veggies and flavors ready to go!

    Sooooo seeing those beers makes me really wish that the TJ's near me sold alcohol!! Mexican beers are some of my favorites.

    Taco night is a great idea and so fun for a big group since everyone can individualize theirs. This would be great for me and my boyfriend since we get the exact opposite thing at Chipotle:)

    We are making tacos this week too with homemade pinto beans, and I'm freaking excited. Of course, I can't go too long without Mexican food. I love it a lot! So jealous of the nice weather you have been having!! I had to run in -13 degree windchill weather this weekend!

    Gorgeous tree. Cherry blossoms? I too get into a rut and find that just going with my cravings helps. I haven't had tacos in forever too, but looking at your post they sure look fantastic. I think I love leftover taco salads even more than the original tacos, especially if I can have a few taco chips crumbled on top. Mmmmm.

    That container is adorable. I love it! Also, those tacos look nom-tastic! I like how Matt's plate is "manly" because it has two tacos on it, hahahaha.

    That container is super cute and a great way to keep wet salad ingredients separated when you are bringing your lunch to work! I usually use an empty spice jar to put my homemade dressing in when I bring salads to work.

    Those tacos look so yummy! What kind of tortillas do you buy (all the whole wheat ones I've bought are really dry and not that tasty)? I am taking biochem this summer and not looking forward to it. I heard its much harder than organic chem!
