I’ve been all about the grain salads this week for lunch – anyone else?

Grain salads are awesome because they are 1) super satisfying with the veggie volume, and 2) really fast to throw together. And the grains made them way more satisfying than regular salads!

For this variation, I mixed together arugula with 90 second brown rice, canned chickpeas, canned beets (the only veggie I buy canned – so good), cherry tomatoes, mushrooms, and avocado (gotta get that healthy fat). The dressing was a homemade mix of olive oil, lemon juice, red wine vinegar, and dijon mustard. Plus salt and pepper! Yum. I ate this on Monday at home and made myself another one at the same time that I packed up for Tuesday’s lunch downtown. Perfect! For the packed variation I just put the dressing in a little ziplock bag so the whole thing didn’t get soggy.

As for dinners, Monday night we threw together a super easy sausage, sauerkraut, and sautéed green pepper and onion feast. Last night, we had a Blue Apron meal – this Mexican-spiced Salmon with Black Rice, Avocado, and Orange Salad was probably one of my all-time BA faves. It was soooo good!

As for fitness, this morning I was up super early to meet my friend Kathleen for the 6:15 a.m. Definitions boot camp class via ClassPass. I LOVE their workouts – so varied so you don’t get bored. They have you rotate through 3 stations twice, and there are different moves each time! I had to race off after it was done to get ready for an AnneTheRD nutrition client session so I didn’t get an action shot… I know you’re all devastated to not see a sweaty selfie. 😉

Georgetown (where Definitions is) is always so pretty in the early morning. The sun was up and starting to rise when we finished up!

I will end this random post with some more randomness: one of the best purchases I have made this winter was a pair of these fleece lined footless fashion (not running) tights. They have made wearing my dresses and skirts in winter doable and they are SO comfy and cozy! I’m wearing them today. 🙂 Love that they are footless, too, so I can wear normal socks under them and not have my toes strangled the way that tights always do.

And now, back to work! I headed downtown after my client session and am finishing out the rest of the workday here. Lots on the to-do list, as always!

    I love whipped beets and roasted beets, especially in a salad, but find canned beets to taste bland, metallic, and/or lacking of flavor. What should I be looking for when buying them canned to find good tasting ones? Have you ever tried roasting them from a can?

      Hmm - maybe my palate isn't as sophisticated, but I love canned beets! I usually just buy the organic canned beets if they are available and if not then the house brand!

    In fairness I haven't tried them for a very long time since I assumed they still tasted that way. Guess it's time to try them again. Thanks for the unintended push to do a retry.

    I went to a restorative yoga class on Monday night. It is hard for me to slow down and just be so I think this is a good class for me!

    I'm also obsessed with tights/leggings in winter! Dresses never go away! It's easier for me with the warmer weather in Paris.. no fleece required ;) Glad you found a solution!

    Trader Joe's has the best steamed beets in their refrigerator section. They last for months in the refrigerator and taste delicious

    We had a Home Chef delivery this week and we made Dim Sum Pork Dumplings with spinach and rice, so good! I think my best workout this week will be this weekend when I get to go snowboarding!!
