Week in Review: Al Fresco Eats + A Run + Toddler Fun

Hi friends! 

We’ve had some good eats this week, and a bonus was that most of our dinners were eaten outside – it was gorgeous this week!

The above pictured quinoa salad + fish was such a yummy and fresh dinner. 

The base was a mix of quinoa + cucumbers + tomato + scallions + a vinaigrette (lots of lemon juice + olive oil + dijon mustard + some salt and pepper), and the fish was pan seared in olive oil with some oregano, salt, and pepper sprinkled on before cooking.

Easy! Try it. 

We had a special dinner on Tuesday night because Matt’s brother Chris was visiting! 

He’s in town for a conference and it was fun to get to see him, and for him to see Riese. After Riese went to bed, we fired up the grill and had steaks, asparagus, and roasted potatoes. 

Hit the spot!

I’ve been enjoying the leftover roasted potatoes with eggs for breakfast – sadly we are out of ketchup but BBQ sauce was a close second. 

And I enjoyed the leftover steak in salad form (with arugula, broccoli slaw, feta, and a balsamic vinaigrette) last night:

Plus some triscuits and guac on the side because the meal needed some carbs. 

The other meal highlight this week was my Slow Cooker Chicken Tikka Masala (<- recipe) – except I actually made it in the instant pot this time, and it worked well! 

I cooked on high pressure for 30 minutes, and once that was done, I set the instant pot to “saute” mode for about 10 minutes to reduce some of the liquid down. 

Served with some rice, and with baby spinach mixed in:

Riese actually LOVED the Chicken Tikka Masala – I was surprised since she has been pickier lately!

For fitness this week, I did my usual mix of yoga classes + a boot camp class, and I also got in an early morning run date with my friend Heather yesterday.

3 miles felt like just the right distance – not too much!

Riese was still asleep when I got home at 6:45 so I even had some time to foam roll… must do this more often!

Also, please note our decorative car seat base – I think it adds that extra something to our living room decor, don’t you?

As for the rest of the week’s adventures, I enjoyed a lot of this (how cute is it that she holds the leash now?):

And this (such a fun playdate with mom friends that got me really pumped for summer – I need to get one of these water tables for our place because Riese loved it!):

Spring weather is the best. It’s so fun to be able to spend most of our days outside. <3

As for today, I’m off to give my intuitive eating presentation to the nutrition professionals attending the DC Metro Academy of Nutrition and Dietetics annual meeting! I’m a bit nervous… it has been awhile since I’ve done a presentation. Wish me luck!
