Get ready. This is going to blow your mind. 4 Ingredient Quinoa Salad – you officially have no more excuses for eating fast food for dinner. 🙂

Quinoa Salad

4 Ingredient Quinoa Salad

In a bowl, mix together:

  • Cooked quinoa
  • Salsa
  • Hummus (any flavor)
  • Chickpeas (canned – drained and rinsed)

And that’s it. Seriously! The proportions are up to you, but I used 1 cup of dry quinoa, cooked with water according to the package, 1 can of chickpeas, about 1 cup of salsa, and about 1/2 cup of hummus. I also added on some cracked pepper to taste.

Want to mix it up? Fun add-ins for this recipe are:

  • Avocado
  • Wilted or fresh arugula or baby spinach
  • Chopped peppers
  • A squirt of lemon juice
  • A few shakes of cumin (amps up the Mexican theme)

Told you it was easy. I know hummus and salsa sounds like a weird combination, but I promise it’s delicious.

    I've heard of salsa and hummus together as a tasty combo but never thought to add it to quinoa. Sounds delicious!

    One of the main reasons I'm obsessed with quinoa - simplicity! I usually just mix mine with a veggie and a bean and top with balsamic. So good!

    Anne, have you tried this with any other grains? I am vegan and LOVE quinoa, but recently realized that I'm allergic to it. I'm thinking I might try this with bulgur or farro. Thanks for the yummy inspiration!

    I just made and tasted a variation on the cranberry peca quinoa salad, delish! To that posted salad, I added, minced Lebanese cucumber, fresh chopped mint, red currant chopped field onion and chili peppers.

    I just made this and it is FANTASTIC! I'm gluten free and this is a perfect lunch or dinner. Plus I have enough for 4 meals. I love leftovers so this was perfect!

    Was short of time, for the Wed night's salad potluck before services, when I found this. PERFECT! Made a double batch, and used corn and black bean salsa as about 1/4 of the total salsa. Used full amount of hummus, but about 1/4 cp less salsa, to my taste. Was fantastic. At the last minute, added a cup of corn, primarily for color, but loved that taste too. Garnished with some fresh cilantro. With leftovers, the family has added mixed vegies, or used rolled in tortillas. Thank you so much for this super easy and versatile salad!
