A BBQ Potluck & Easy Cornbread Muffins

Morning!

Last night, the grad school girls and I all gathered at Elle’s place (“The Clubhouse”) for a BBQ potluck! Before heading over, I decided to whip up some corn muffins for the cause. Because what goes better with pulled pork than cornbread?

I used the Arrowhead Mills corn bread/muffin mix pictured above. I love this brand — no weird additives/preservatives. Super easy recipe, too!

A mere 15 minutes later, my kitchen smelled delicious and these came out of the oven.

I mean, I had to make sure they weren’t poisonous or anything. 😉

When I arrived at Elle’s, I saw that great minds think alike — our friend Jill had made cornbread muffins too, but mini size!

They were equally delicious. 🙂

We also had brie and crackers for appetizers, wine (which I passed on — I feel like I need to detox after the holidays), and a big salad courtesy of Libby. Here’s my plate:

Deeelish! I love me some BBQ.

I’m off to try Pure Barre for the first time — will let you guys know my thoughts! As for now, here’s today’s motto (courtesy of Pinterest). 🙂

What’s your favorite cornbread recipe? Also, any ideas for what to do with the rest of the package of cornmeal that’s not cornbread? I feel like an entire package of cornbread will be a bit much. 😉

    I found a great cornbread recipe that's gluten free and uses all natural ingredients. It was delicious!

    You should totally try Ashley's cornbread banana bake. It's my favorite breakfast ever! http://edibleperspective.com/2011/04/wait-a-minute/ And it take just minutes in the microwave :)

    My mom makes this corn bread that has 2 cans of creamed corn in it. NOT healthy, but so gooey and delicious! it's a treat!

    I swear by the basic Joy of Cooking (a classic cookbook!) cornbread recipe. I've made it twice in the last week, once to go with hoppin' John and once with chili. You could use the remainder to make polenta to serve under beans + greens or chicken/pork.

    You could make polenta or put it under pizza crust when baking or grilling so it doesn't stick to the pan or pizza stone. It makes the pizza more like pizzeria pizza.

    I love the spicy cornbread recipe from Ashley at (never home) maker. I always make cornbread muffins and freeze them for a quick side with soups or chili. I made cornbread salad once with leftover cornbread - it was so good. I just made a couple healthy swaps from the allrecipes.com recipe!

    I doctor up cornbread by adding corn kernels from a frozen bag and herbs on hand. And cayenne or something hot for a kick. I've also had my bag of cornmeal for at least a year! Just keep it on hand for a fun meal addition.

    Oooh, I love the cornbread mix from Trader Joe's because it has little corn pieces in it! I have a recipe to make it from scratch too, but I can't remember where it's from!

    Yes, yes, that is some good eating there. I love cornbread especially crumbled up in homemade vegetable soup and dunk it in collard green liquor. Good ole Southern cooking. Looks great.

    Right now, I'm really loving cornbread & cranberry swirled corn muffins. You take about a teaspoon full of the whole berry cranberry sauce and drop in the middle of each unbaked muffin, swirl and bake. They are so good. I also like corn cakes instead of regular pancakes, and corn pudding. Mexican cornbread and also broccoli cornbread are high on my lists.

    I have cornbread in the oven baking right now! I am making a cornbread salad with it. I love cornbread salad! It has fresh, raw broccoli & caulifower, chopped red onion, broken up cornbread and light mayo. It's delish!

    I forgot to mention that it also has crisp, crumbled bacon in it. I try to make it a bit "healthier" by using turkey bacon.

    I made a recipe for chicken tamale casserole a few months ago using corn bread mix and it was amazing! I'll definitely have to check out the Arrowhead Mills mix.

    I am interested in hearing what you think about Pure Barre! A close friend of mine is actually an instructor, but I've never taken a class! Go figure! :-) I don't have a favorite cornbread recipe, but I do prefer mine soft and sweet as opposed to crunchy and salty.

    I love that brand cornbread mix too. The problem with corn muffins is that they get a little dry after just a day or two. They're awesome with some cranberries mixed in plus a couple packets Stevia.
