A New Quick Packed Lunch

Good morning!

I have to race off to my two exams this morning (gah), so I will leave you with my latest quick packed lunch. I brought this lunch to school on Tuesday!

First up — a toasted sandwich thin (toasted so it doesn’t get soggy) filled with a simple mixture of tuna, a spoonful of plain Greek yogurt, a hefty squirt of dijon mustard, and some chopped celery. Topped with spinach.

For something crunchy, I packed some green peppers (love these — I remember I always used to steal pieces of them when I was little and my mom was making a dinner involving green peppers!):

For something sweet and juicy to end the meal with, some grapes:

And a “just in case all hell breaks loose and I’m dying of starvation” Kashi bar, which ended up being consumed during a thoroughly confusing biochem lecture at 11 a.m.

Love that flavor — I used to buy Kashi bars ALL the time but kind of got sick of them awhile ago — well, they are officially back. 🙂

I didn’t pack any afternoon snacks since I knew I’d be getting home around 3. Tuesday was nice and warm out, so I decided to bust out my neglected blender and make myself a smoothie before diving into studying!

That’s my Hidden Veggie Cherry Lemon Smoothie (click for recipe) — one of my faves. There’s spinach in it but you would never know! I also enjoyed some unpictured hummus and crackers. That combo never lets me down. 🙂

I spent this morning rocking out on the elliptical machine while studying my notes — today’s exams are in nutritional epidemiology and, of course, biochemistry. I’m off to school — wish me luck!

    Whenever I pack a "just in case" snack, it always ends up being eaten! I'm not a happy camper when I'm hungry so I'm always prepared!

    Been packing sandwiches to work for years and always thought a soggy 'wich was a part of life. Toast the bread first! I feel horribly embarrassed at my silliness. Thank you.

    I love healthified tuna salad recipes! And I did the same thing with kashi bars, I over did them and became so sick of their flavor. I had a pumpkin spice bar the other day though and I fell right back in love :)
