A Quickie Leftover Packed Lunch

Good morning!

My friend Jillian and I had a great 5.6 mile run this morning — our last track workout before the D.C. National half marathon in a week and a half! More details on our workout to come 🙂

But for now, I just packed up lunch and am getting reading to head off to school!

Leftovers are the best type of lunches — they literally take 5 seconds to pack up. I packed up the second half of my “Cheesy” Vegan Coconut Sautéed Chickpeas & Kale:

I also threw in a few baby carrots to munch on, and put the chickpea/kale mixture on top of some fresh mushrooms and spinach, just to mix things up. I’ll heat it all (minus the carrots) before I eat it!

To enjoy with my lunch (I always like ending lunch with something sweet and juicy!), I packed a kiwi:

And for afternoon snacks I threw in a Chobani Pineapple Greek yogurt:

And one of my homemade 5 minute no bake PB granola bars!

I whipped up a batch of these yesterday because I have a really busy couple weeks coming up and want to have them on hand for easy grabbing and go-ing 🙂

And last but not least, some tea! As always, I packed my mug and a couple tea packets to enjoy throughout the day. Just add hot water and a splash of milk 🙂

Their Facebook fans will then vote on the pictures by “liking” them — the four photos with the most “likes” will be contenders for the grand prize, a year’s supply of their favorite Attune Foods’ product! Meghann, Heather, Alisa, and I are the judges who will decide the final winner 🙂 Check out the Attune Facebook page later this afternoon for more details!

Yoga matters to me because it symbolizes making time for myself to be healthy, both mentally AND physically. And tree pose is meaningful because when I first started yoga a few years ago, I could NEVER do tree pose and it drove me crazy. I was so proud of myself when I finally could!

    I agree that leftovers make THE BEST lunch. So easy to pack and it's especially fun when you rework them or pair them with different things than you did when you had them the first time. Those containers - must be the Pyrex bakeware/storage set because I have the same ones and LOVE them!

    Hooray for taper time! I'm also cutting down my mileage for the NYC Half this weekend and am happy my legs have been feeling a tad fresher. I also have a Chobani packed for my afternoon snack :)

    I love when I have enough leftovers from dinner to send with the husband and have enough for me for lunch too :) I just finished a pineapple chobani, it's quickly becoming my favorite flavor!

    I've read such great things about your homemade granola bars and am dying to make them. Only thing- I cant find rice syrup where I am. What would you suggest as a substitute?

      Unfortunately you really need the brown rice syrup - it's what makes them stick together! I'd recommend just buying some online - it'll be worth it! :)
